Happy 3rd birthday to me!

3 years ago today I got 800 million stem cells back. I remember sitting there feelings equal parts excited and terribly ill. I remember feeling like I was never going to get through this. But here I am today, climbing mountains, hiking 20 kms to waterfalls and living my best life.

Happy

I know it has been weeks since I went radio silence. I took some much needed time off from social media. I wanted to focus on my mental health and what I love the most food and cooking. But I wanted to say I am back.

I am back and going to slowly be bringing you new recipes, youtube video and feel good posts.

I took a break for my mental health and because it was all beginning to feel like work instead of fun.

So I am back, slowly. I will be posting what I want to when I want to and I hope you will love the recipes with me.

BTW one thing that I have started doing is meal prep sundays live. In my facebook group. So if you want access to even more recipes and would like to meal prep with me, make sure you check the link in my bio.

Sending you all the love. Remember do what you need to for your mental health. If something is not serving you (even if it is something you love), walk away or put it on pause. Come back to it when you are ready and always remember to love yourself.

Do you remember chocolate cream pie? When I was younger I used to go to the coffee shop down the road and I would get a slice of chocolate cream pie. It was the best treat.

As an adult, I found a chocolate tart that my boyfriend and I loved. Sadly not of these epic chocolate desserts were vegan. So I decided I was going to combine the two of them into one glorious recipe! I give your my vegan chocolate tart. You can bake along with me in my latest you tube video!

I promise you this recipe is a crowd pleaser and an easy recipe if you have people pop in for a surprise visit!

12 individual tartshells
400 grams vegan chocolate chips
1.5 cups coconut milk
1/2 cup almond butter
1 tsp vanilla

Guys I am STILL obsessed with waffles, ever since I got my waffle maker I have been making more waffles than you could guess. They are my go to meal and I now dream of waffles!

So I decided to make a savory twist on my buttermilk waffles and make TACO WAFFLES. Like Yes.

Tacos and waffles are two of my favourite foods ever so I just had to make these waffles!

Ingredients
1 package impossible beef (or meat substitute of your choosing).
1 cup violife shredded tex mex cheese (or your favourite vegan cheese but this melts so well!).
1 .5 cups Ripple Pea Milk (or non dairy milk of your choosing)
2 tsp apple cider vinegar
2 cups all purpose flour
1 tbsp baking powder
1/2 tsp sea salt
1 vegan egg (I use just egg - but you can use your favourite - just make sure it is not a sweet substitute).
1/4 cup melted vegan butter (cooled)

All your favourite taco toppings (I use lettuce, tomatoes, avocado, salsa and vegan sour cream for my general taco waffles).

This is my favourite tomato tart.

This week I was missing my garden and warm weather (hello calgary winter) and wanted to to when I had all the fresh amazing tomatoes and made this amazing vegan tomato tart!

The tomato topping is easy

1. 1 cup cherry tomatoes
2. 1 cup chopped kale
3. 4 garlic close minced
4. 1 tbsp Italian seasoning
5. pinch of salt
6. pinch of pepper.
7. Quarter cup olive oil

The first thing I did was prepare the tomatoes. I tossed the tomatoes, with garlic, Italian seasoning, salt and pepper. I drizzled them in oil. Next, I baked them for 20 minutes at 350F. Until they were soft and starting to burst.

While the tomatoes were cooking, I sauteed the kale with a bit of olive oil. Once it was done (and has basically shrunk to nothing 🤣) I removed it from the heat.

Finally, I rolled out my puff pastry. I topped it with the tomatoes and smashed them with a fork slightly - enough to flatten them but not enough to turn them into sauce. Then I topped with the kale pieces.

Finally, I baked the puff pastry, 20 minutes at 350F or until golden brown.

You can add vegan cheese but I like my tart with no cheese, I find too often vegan cheese is the start and for this tart, the star is the TOMATOES.
