Dandelions, Nettle, and Horsetail… oh my.

One of my favorite truths about working with nature is this—
I don’t have to garden. The Earth is already providing.

Clover, Dandelion, Lamb’s Quarter, Plantain, Chickweed, Pennycress, Thistle… you get the point.
They grow abundantly, generously, and without asking for anything in return.

Eat Your Weeds has become a mantra of mine.

This year I’ll be guiding a series of Nature Retreats where we step into relationship with the plants around us—learning identification, wildcrafting, and how to work in reciprocity with the Earth.

I am not a fan of waste… especially with the price of food these days.

One of my favorite ways to use kitchen scraps—and even bring in the nutrients from my backyard “weeds”—is simple:
low temperature dehydration.

This keeps the integrity of the plant intact… the enzymes, the minerals, the life force.
Onion cores, carrot tops, celery ends, kale stems, peppers, and especially mushrooms… nothing needs to be thrown away. Just dry it, grind it, and you have something incredibly nourishing and flavorful.

This Spring Umami Popcorn Seasoning came from exactly that. A blend of what I had, turned into something delicious.

You can sprinkle it on Popcorn, Roasted potatoes, Rice or grain bowls, Soups and broths...

Honestly… everything.

I might finally make a cookbook with ChatGPT 😂

I love that I can just speak what I’m creating, and it turns into something visual and shareable.
