Stuffed pepper Recipe

Ingredients (6 peppers)
• 6 bell peppers (any colour)
• 1 lb (450 g) extra-lean ground beef, turkey, or chicken
• 1 cup cauliflower rice
• 1 small onion, finely diced
• 2 cloves garlic, minced
• 1/2 cup chopped tomato
• 1 tbsp olive oil
• 1 tsp paprika
• 1 tsp dried oregano
• 1 tsp dried basil
• Salt & pepper to taste
• Optional add-ins: chopped spinach, mushrooms, zucchini

Instructions

1. Prep the peppers
• Cut the tops off and remove seeds.
• Stand them upright in a baking dish.
• Bake at 375°F for 10 minutes to soften slightly.

2. Cook your filling
• Heat olive oil in a pan.
• Add ground meat, breaking it apart until fully browned.
• Add garlic, spices, and (optional) onion or veggies.
• Simmer 5 minutes.

3. Stuff the peppers
• Fill each pepper tightly with the meat mixture.

4. Bake
• Bake at 375°F for 25–30 minutes until peppers are tender and tops are browned.
