We just made these delicious low sugar pumpkin muffins to kick off the fall. Try the recipe and let us know your thoughts.
Ingredients:
• 1 ¾ cups whole wheat flour (or half oat flour, half whole wheat for lighter texture)
• 1 tsp baking soda
• ½ tsp baking powder
• 1 ½ tsp pumpkin pie spice (or mix cinnamon, nutmeg, ginger, and cloves)
• ½ tsp salt
• 2 large eggs (or flax eggs for vegan)
• 1 cup pumpkin puree (not pumpkin pie filling)
• ¼ cup melted coconut oil (or olive oil)
• ⅓ cup maple syrup or honey (or ¼ cup for extra low sugar)
• ¼ cup unsweetened applesauce (adds natural sweetness + moisture)
• 1 tsp vanilla extract
• Optional: ¼ cup chopped walnuts, pecans, or dark chocolate chips

Instructions:
1. Preheat oven to 350°F (175°C). Line a muffin tin with parchment liners or lightly grease.
2. In a large bowl, whisk together flour, baking soda, baking powder, spices, and salt.
3. In another bowl, whisk eggs, pumpkin puree, oil, maple syrup, applesauce, and vanilla until smooth.
4. Add wet ingredients to dry and stir gently until just combined (don’t overmix).
5. Divide batter evenly into 12 muffin cups.
6. Bake 18–22 minutes, or until a toothpick comes out clean.
7. Let cool before serving.
