Creamy Lemon Chicken Orzo (Stovetop)
Light, comforting, high-protein, and gentle on digestion. Perfect for a weeknight.
Ingredients (4 servings)
• 2 chicken breasts, diced
• 1 tbsp olive oil
• 2 cloves garlic, minced (optional if sensitive)
• 1 cup dry orzo
• 2 ½ cups low-sodium chicken broth
• ½ cup lactose-free cream or regular cream
• Juice + zest of ½ lemon
• ½ cup grated parmesan
• 1 cup baby spinach optional (you can omit if you prefer)
• Salt & pepper to taste
• Fresh parsley for garnish

Instructions
1. Heat oil in a pan, add chicken, season with salt & pepper, and cook until lightly golden.
2. Add garlic (optional) and sauté 30 seconds.
3. Stir in orzo and toast for 1 minute.
4. Pour in broth, bring to a simmer, cover, and cook 10 minutes, stirring occasionally.
5. Stir in cream, lemon juice, parmesan, and optional spinach.
6. Let it thicken for 2–3 minutes until creamy.
7. Top with lemon zest + parsley.
