It’s soup season! This simple recipe is full of flavour, easy to make, and made with ingredients that are in season right now. Eating what’s in season means your produce is fresher and more nutrient-rich.
What you’ll need:
-1 medium butternut squash, peeled & cubed
-2 local apples (Honeycrisp or your fave), peeled & chopped
-1 onion, diced
-2 cloves garlic, minced
-4 cups low-sodium chicken or veggie broth
-1 tsp fresh thyme
-Olive oil, salt & pepper
What to do:
-Sauté onion and garlic in a pot until soft.
-Add squash, apples, thyme, and broth. Simmer until squash is tender (20ish min).
-Blend until smooth, season to taste, and enjoy!
