Mom’s no-fail dinner rolls. The kind that disappear before you plate the main course. Melt: one cup milk, three-quarters cold water, half cup sugar, two tsp salt, quarter cup shortening. Under 115. Yeast party: half cup lukewarm water + two tsp sugar + two quick-rise packs. Wait for the foam. Beat two eggs into that melted stuff. Add three cups flour. Stir. Add flour slow—till you reach seven to seven-and-a-half cups. Soft dough. Knead ten. Rise—hour, hour-and-a-half. Pro tip: oven light on, pan of hot water below, old towel overtop. Like a bakery hug. Punch, roll, shape. Rise again. Same time. Brush with milk. Bake three seventy-five, twelve to fifteen. Butter tops while they’re still shy. Tear, butter, grin. Mom would be proud.
