Heart Healthy Recipe 🍽️
February is heart health month so we are sharing a delicious meal idea that will provide heart healthy benefits! Save this for a dinner for you and your family - serves 4 people.
INGREDIENTS:
4 salmon fillets (4–5 oz / 113–140 g each)�1 lb baby potatoes (about 3 cups), halved�1 bunch asparagus (about 1 lb), trimmed�1½ cups cherry tomatoes, whole�3 tbsp olive oil, divided�2 cloves garlic, minced (or 1 tsp garlic powder)�1 lemon, sliced�1 tsp dried dill (or parsley or thyme)�½ tsp black pepper�Optional: pinch of salt or salt-free seasoning blend
INSTRUCTIONS:
Preheat oven to 400°F (205°C). Line a large baking sheet with parchment paper
Toss potatoes with 1½ tbsp olive oil and ½ tsp garlic. Spread evenly on the pan → Roast for 15 minutes.
Remove pan from oven. Add salmon, asparagus, and cherry tomatoes
Drizzle remaining 1½ tbsp olive oil over salmon and vegetables
Sprinkle with dried herbs, black pepper, and remaining garlic. Top salmon with lemon slices
Return to oven and bake for 12–15 minutes, until salmon flakes easily and vegetables are tender
Serve warm
