Recipe of the Week: Hearty Slow Cooker Lentil & Vegetable Stew
Warm, nourishing, and packed with protein and fibre — this slow cooker stew is perfect for busy days when you want a healthy, homemade meal waiting for you at the end of the day.
Ingredients
1 ½ cups dry green or brown lentils, rinsed
4 cups low-sodium vegetable broth
1 can (796 mL) diced tomatoes
3 carrots, peeled and chopped
2 celery stalks, chopped
1 medium onion, diced
3 cloves garlic, minced
2 medium potatoes, diced
1 tsp smoked paprika
1 tsp dried thyme
1 tsp cumin
Salt and pepper to taste
2 cups chopped kale or spinach (add near the end)
1 tbsp olive oil
Optional: a squeeze of lemon juice or a sprinkle of parmesan before serving
Directions
Add all ingredients (except the kale/spinach and lemon juice) into your slow cooker. Stir to combine.
Cook on Low for 7–8 hours or High for 3–4 hours, until lentils and vegetables are tender.
About 15 minutes before serving, stir in the chopped kale or spinach.
Taste and adjust seasoning. Add a drizzle of olive oil and a squeeze of lemon juice if desired.
