Try our Cinnamon Apple Quinoa breakfast recipe!
Ingredients:
1 Cup Quinoa
1&3/4 cup water
pinch of salt
1 to 2 tbsp virgin coconut oil
3 apples (Vicky and Matt use Granny Smith!) peeled, cored and thinly sliced
1/4 cup honey, maple syrup or stevia powder to taste
1/4 cup apple juice or water
2 to 3 tsp of cinnamon
1/2 tsp nutmeg
**Bonus: Try adding fresh or frozen cranberries, peaches or plums to the cinnamon apple topping!
Directions:
Rinse and drain the quinoa in a fine mesh strainer to remove the bitter coating. Place rinsed quinoa in a small pot and add water and salt. Cover, bring to a boil, then turn the heat down low and simmer for 15 minutes. Remove pot from heat and let stand for 10 minutes before serving
Heat a 10-inch skillet over medium heat. Add coconut oil. When the oil is melted, add your apples and sauté for a few minutes, stirring frequently. Then add honey, water, spices and salt. Stir and let simmer, uncovered while stirring occasionally for 10 minutes or until the apples are cooked as desired.
Serve overtop Quinoa, yields 3-4 servings.
