Wonton nachos are the snack of the summer (mark my words) 🌿

1/2 pkg of wonton wrappers (bake or fry in a bit of oil)
1 bunch of green onions (thinly sliced)
1/2 cucumber (small dice)
Sushi salmon or tuna (thinly sliced or cubed)
1 lime (juice 1/2 into mayo and slice other half to squeeze on top)
1 avocado (thinly sliced)
1 small sweet potato (small dice+bake in oven or air fryer)
Edamame beans (steamed)
Mayo+sriracha drizzled on top with lime slices

Had the most satisfying spring salad for dinner last night 🌿

1 can chickpeas drained and washed
1/2 English cucumber diced
1/4 cup chopped parsley
A bundle of green onions chopped
1 avocado diced
Juice from 1 lime
A drizzle of extra virgin olive oil
Salt and pepper to taste
1/2 tsp chilli flakes

Toss everything together in a bowl and add some crumbled feta on top and enjoy this as a meal or a delicious side salad 🤍

This peanut coleslaw has to be my favourite meal at the moment 🥜

Chop up your favourite veggies, I like to use cabbage, carrots, cucumber, green onion + bell peppers. Peel a couple mandarin oranges (the secret ingredient) for vitamin C and extra antioxidants. Heat up some edamame beans for some protein.

Make your peanut sauce:

1/4 cup peanut butter, 2 tbsp soy sauce,
1 tbsp rice vinegar, 1 tbsp maple syrup,
2 tsp chili garlic sauce, 1tbsp grated ginger

Toss the veggies in the sauce and enjoy!

I top mine with peanuts and cilantro 🤍

The best dinner tonight (Tik tok made me do it) 🧡

You will need:

1 butternut squash (cut in half and remove seeds)
1 small green zucchini diced
1/2 red onion diced
1 bell pepper diced
Handful of cilantro roughly chopped
1 tomato diced (or use a handful of cherry tomatoes)
2 cloves garlic minced
Salt+pepper
Olive oil
(I used garlic and chive) or cheese of your choice :)

Wash and prep your vegetables.
Mix together zucchini, onion, bell pepper, 1/2 cilantro, tomato and season with salt+ pepper and a drizzle of olive oil. Add to 2 small oven safe bowls.

Rub some oil, salt+ pepper and garlic on the squash halves.

Bake at 400 for 30-40 mins.

Remove from oven and add a spoonful of cheese to the veggie mix (measure cheese with your heart, always).

Top each squash with the veggie mix, salt+pepper and the remaining cilantro.

🧡BUTTERNUT SQUASH SOUP 🧡

1 butternut squash peeled/diced
1 onion diced
2 carrots peeled + diced
3 cloves of garlic minced
2-3 cups vegetable broth
3/4 cup coconut milk
S+P
1/2 tsp Chili powder
1 tsp curry powder
1 tbsp Maple syrup

heat a pot with 1tbsp olive oil and add onion + carrots, cook until soft. Add garlic and cook for 2 mins. Add squash and cook for 10 mins. Cover with veg broth and boil until squash and carrots are falling apart with a fork. Add everything else and blend. Bring back up to heat, garnish with coconut milk & toasted pumpkin seeds and enjoy 🧡

Ps. For an extra special treat I cut up some focaccia bread from and toasted it to dip into the soup 🤤

Stumbled across an elderberry tree on a walk today with (and Chibbs of course 🐶) and decided to make some elderberry syrup and jam 🤍

Elderberries are poisonous when eaten raw, but when cooked, they are known to have many health benefits!

Sweet potato and red lentil soup (from )

This is the perfect soup for fall! Not only is it naturally sweet and tasty, it comes with a ton of health benefits too!

Ginger and garlic are great for your immune system and provide great anti inflammatory benefits 🧄

Sweet potatoes act as a natural sweetener, provide immune support, and are great for your brain and eyes 👀

The dried turmeric cinnamon clove and cayenne in this soup are sure to warm your belly and keep your gut feeling good 👍🏻

I left out the maple syrup in this soup as the sweet potatoes were sweet enough for me 🤍

*still trying to figure out what to do with all these tomatoes*

SUNDRIED tomatoes (in the oven) 🍅

1lb tomatoes
Salt
1 tsp dried basil
1tsp dried oregano
1/2 tsp dried Rosemary
1tsp sugar
1tbsp olive oil

Preheat oven to 350f

Wash tomatoes

Slice quarter smaller tomatoes or cut larger tomatoes into wedges.
Sprinkle with salt and let strain in a colander for 20-30 mins
Rinse off salt and pat dry with a paper towel

In a bowl mix the tomatoes, olive oil and seasonings together

Lay flat on a baking sheet and put in oven
Bring oven temperature up to 450f and bake for 30 mins once it reaches temp. Turn off the heat and leave tomatoes in oven for 4 hours.

Remove from oven and use immediately. Store in a mason jar with olive oil for 1 week. Enjoy 🙂🤍

Who else has an over abundance of tomatoes right now?? 🖐🏼🖐🏼🖐🏼

With the fresh feel of fall approaching, what better way to utilize your tomatoes than soup?!

Try this roasted tomato, pepper + basil soup:

In an oven safe dish add:

5 tomatoes
1 quartered and de seeded red pepper
1 jalapano (leave the seeds for more spice)
1 clove of garlic
A handful of basil
A sprig of thyme
Salt and pepper

Drizzle over some olive oil and
Roast in the oven at 400f for 30-40 mins

Remove from the oven and let cool, squeeze out the garlic, remove the thyme stem, and remove the peel from the tomatoes + pepper (you can leave the peel on if you prefer). Add to a blender or food processor with 1-2 cups of vegetable broth and blend till smooth. Add back into a pot to bring back up to heat, season and and enjoy. Feel free to add cheese or cream if you desire 🤍🤍🤍
