These are the lunches I’ve been eating on repeat lately. Leftovers from dinner the night before are great, but if I don’t have leftovers, it’s almost always one of these 4 meals.
I don’t spend hours meal prepping for the week, but I always do just 1-2 things at the beginning of the week to set me up for success. Whether I prep taco meat, make a spaghetti squash, or prep a chicken salad, I know I have to do SOMETHING if I want to make healthy choices a non-negotiable.
