Happy Thanksgiving! Looking for healthy turkey leftover ideas? Try turkey apple salad lettuce wraps:
Ingredients
12 oz shredded cooked turkey breast
1 cup chopped green apple
1/2 cup chopped celery
1/2 cup sliced green onions
1/2 cup chopped flat-leaf parsley
1/4 cup chopped walnuts, toasted
1/4 cup chopped dried tart cherries or cranberries
6 oz of plain greek yogurt
2 tablespoons lemon juice
1/2 to 1 tsp of hot pepper sauce or red chili flakes
1/4 tsp sea salt
1/4 tsp fresh ground black pepper
In a large bowl, combine turkey, apple, celery, onions, parsley, walnuts and cherries.
In a small bowl, stir together yogurt, lemon juice, hot pepper sauce, salt and pepper.
Add the yogurt mixture, stir until well mixed.
Divide turkey mixture amongst lettuce leaves, spooning turkey mixture into center of each leaf.
