Sweet Potatoes
5 Medium Sweet Potatoes, peeled and diced
2 table spoons honey
1/8 tea spoon nutmeg
1 table spoon Becel
Place sweet potatoes in saucepan and cover with water. Bring to a boil, then simmer for 20 min or until potato is soft when prodded with a fork. Drain. Return sweet potato to saucepan. Mash with remaining ingredients and season with pepper to taste
Serves 4 1 serving = ½ fat, 1 veg, ½ free choice

Roasted Citrus Turkey Breast
1 bone-in turkey/chicken breast (4-5 lbs)
Pinch of parsley, finely chopped
Pinch of fresh thyme, finely chopped
Pinch of fresh rosemary, finely chopped
Pinch of freshly ground black pepper
Pinch of paprika
2 oranges
1 lemon
Rinse turkey and pat dry with paper towels. In a medium bowl, combine the parsley, thyme and rosemary. Grate the oranges and lemon peel and set the oranges and lemon aside. Add the peels to the herb mixture and toss until combined. Rub the herb mixture over the skin of the turkey. Place the turkey on a rack in a large roasting pan. Cut the oranges and lemon in half and squeeze their juices over the turkey. Also sprinkle the turkey with the pepper and paprika. Insert a meat thermometer in the thickest part of the breast. Roast turkey uncovered, at 325 degrees F for 2 1/2 hours or until the thermometer registers 170 degrees to 175 degrees. Baste turkey often with the pan juices. Remove and discard the skin before serving.
Serves 1 Exchange: 1 Protein
Note: Loosely cover the turkey with foil during roasting to avoid over browning.

Minestrone Soup
2 tbsp olive oil
1 medium bell pepper, diced
2 cups chopped onion
3-4 cups (or more) water
5 medium cloves garlic, minced
2 cups tomato puree
1 stalk celery, minced
fresh black pepper, to taste
1 medium carrot, diced
½ cup freshly minced parsley
1 tsp oregano
1 tap basil
1 small zucchini, diced, and/or
1 cup diced eggplant
½ to 1 cup dry pasta (any shape)
1 or 2 medium-sized ripe tomatoes, diced (optional)
1-1 ½ cups cooked pea beans, chickpeas, or kidney beans
Heat olive oil in a kettle or Dutch oven. Add the onion and garlic. Sauté over med. Heat for about 5 mins, then add celery, carrot, eggplant, oregano, black pepper, and basil. Cover and cook over very low heat about 10 min. stirring occasionally. Add bell peppers, zucchini, water, and tomato puree. Cover and simmer about 15 min. Add the beans and simmer another 5 mins. Bring soup to gentle boil. Add pasta, stir, and cook until the pasta is tender. Stir in the diced fresh tomatoes and serve right away

Do you find nutrition labels confusing? You are not alone!

At Herbal One, we will show you how to recognize healthy options and how to read nutritional labels.

When reading food packaging, refer to the nutrition label rather than marketing claims when making selections.

However, make sure to check the serving size to make sure that it’s a suitable portion. Otherwise, you may need to double or triple the numbers for calories, sugar, sodium, etc.

When reviewing labels for grain products (such as crackers, bread, and cereal), we suggest looking for products that contain 18-20g carbohydrates. However, you should subtract the grams of fiber from the total carbohydrates.

We also recommend paying close attention to sodium values to reduce water retention and bloating.

Basic Crepes
1 ½ cup 1% milk
3 eggs
2 tbsp oil
1 c flour
Place milk, eggs and oil in blender or food processor container; cover. Blend until smooth. Add flour; blend until batter is well blended and smooth. Pour into bowl; cover. Refrigerate 30 min. Lightly coat skillet with cooking spray; heat on medium. Pour 3 tbsp of batter into skillet; rotate to coat evenly. Cook 1 min. or until golden on underside. Loosen edge with rubber spatula and turn out of pan onto paper towel. Stack, browned side up, with waxed paper between each crepe.
Makes 6 crepes – 1 serving (2 crepes) = 1 starch

German Stuffed Cabbage
5 cups water
12 cabbage leaves
1 lb ground turkey
¾ cups cooked rice
½ tsp onion powder
½ tsp black pepper
¼ tsp dried thyme
3 tbsp vinegar
3 cups sauerkraut
Boil 4 cups of water in large pot and remove from heat.
Soak cabbage leaves in the boiled water for 5 mins or until softened. In a large bowl combine turkey, rice, and spices. Place 2 tbsp or turkey mixtures in middle of each leaf roll leaf tightly. Line crock pot or slow cooker with sauerkraut and place stuffed cabbage leave over top. Pour in remaining cup of water and vinegar into the pot, cover and slow cook for 6-8 hours.
Serves 6 – 1 serving = 2-1/2 vegetable, 1 protein, ½ starch

Did you know that both 1 pound of fat and 1 pound of muscle weigh the same but muscle takes up less space?! This explains why you can weigh the same (or more) on the scale but still notice inch loss.

Fluctuations are completely normal throughout any weight loss journey. Furthermore, fluctuations are not always an indication of something that you are doing wrong. So rather than jumping to the conclusion that you are to blame (especially when you have been eating healthy and staying active) or that your healthy efforts are not working, consider the other factors influencing your weight.

These types of fluctuations are perfectly normal but sometimes people give up because they are not seeing results on a daily basis. Not only will your weight change daily, but it will change from morning to night as well. There’s no point in weighing yourself every single day (let alone, several times a day).

Hi Everyone,

Often we wonder how to up our game or get more committed to lose weight. It's a worthwhile question. And the answer is simple.

Start by noticing how you feel when you eat healthy choices on Plan, drink your water, and get some walking or exercise accomplished in a day. We feel proud and confident. We experience good feelings. Yes!

And then notice how you feel when you eat packaged or processed food, without nutrients and full of sweet, salty or fatty tastes. It's a way to make yourself feel bad. And the more you feel bad, the more you can turn to food to numb those feelings.

The #1 way to change all this is to do what feels good. Take action toward what you want to live. Be the person you value! Do what gives you a positive feeling and positive impact in your life.

The easy way to get into action is to get out of your head and those thoughts that convince you not to act. Simply take an action step toward your desires. You'll feel great, you'll lose weight, and you'll live the life you deserve.

Put a star on your Food Plan every day for 7 days that you cared for you. Then do that for 7 more days, and 7 more until you have cared for you and had good feelings for 30 days. Get consistent in taking great care of you. Your results will reflect your consistent action.
