this is my easy stir fry rice that i make when i don’t l know what else to do with the rice and we don’t want plain white rice lol. i’m serving it with roasted chicken thighs tonight🤌this is super versatile you could always add onions or other veggies if you like. i didn’t do onions because my youngest is nine months old and will throw food on the floor and my dog will try to eat it lol so it just makes life easier if there’s no onions in this!! you could also add cooked chicken directly to the stirfry at the very end, i serve it on the side.
ingredients and a rough method below! save for the next time you need a side 💌
ingredients (apppro###x y’all)
1 + 1/2 cups cooked white rice
3 carrots, peeled and chopped finely
1 small head of broccoli, chopped
4 eggs
1/4 cup tamari + 1 tbsp
1/8 cup rice vinegar
3/4 cup chicken stock
1 tbsp white wine vinegar
3/4 tsp salt
1/4-1/2 tsp red pepper chilli flakes (if desired/to taste)
4 cloves of garlic
extra virgin olive oil for the pan (few tbsp at least, add more as needed)
toasted sesame seed oil (couple tbsp)
method
- make sure your rice is already cooked and had time to cool down ideally, day old rice is great for this
- once veggies are chopped, add some evoo to pan over medium heat and sautee garlic before adding in carrots, sautéing until they soften slightly (5 mins or so)
- then add broccoli and continue to sautee until it turns bright green
- make a space (push veggies to side) in pan to crack your eggs, and add a bit more oil first (2 tbsp or so)
- crack eggs, scramble in pan
- add in rice
- mix a bit before adding tamari, rice vinegar, chicken stock, white wine vinegar, combine
- add spices, continue stirring
- allow rice and veggies to sautee for a bit over medium heat
- end by drizzling toasted, sesame seed oil across everything
- all done!
