In an ironic twist of fate this diabetic 👩🏼‍🍳 made ALL THE CARBS yesterday! Homemade Icelandic Brown Bread, chocolate chip cookies and pancakes. 🤤 It’s a common misconception that Type 1 Diabetics “can’t eat sugar”. It’s really about portion control, glycemic index (the bread has part whole wheat flour, pancakes have whey, cookies have oatmeal-all adding fibre to help lower the spike 🎢), and timing (I try my best to eat three meals a day-about 5 hours apart). I count my carbs and take insulin accordingly. Sounds simple, right?!?! Ha-no. 🤓

I like having a purpose and right now it is to eat healthy and feed my family! 👩🏻‍🦰👨🏻‍🦲👦🏼 🐶 I love to cook and wanted to share my latest invention: Tahini Parmesan Pasta 🤤 ❤️❤️❤️

1 tablespoon olive oil
1 onion, chopped
2 cloves of garlic, minced
2 cups of broccoli florets, chopped
2 carrots, chopped in rounds
3/4 cup lentils, rinsed and cooked
2 tablespoons Tahini
2 tablespoons Parmesan cheese, grated
2 tablespoons lemon juice
1 teaspoon lemon rind, finely grated
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 cup of vegetable broth (more for sauce as needed)
3 cups of rotini pasta
Salt and pepper to taste
Sunflower seeds for serving.

1. Cook pasta according to package directions.
2. Chop onion and mince garlic. Heat oil in a large pan over medium heat. Cook onion and garlic for 2-5 minutes until onion is translucent. Add broccoli and carrot and cook for 4 more minutes.
3. Add lentils, tahini, Parmesan,spices, lemon juice, lemon rind, and broth to broccoli mixture. Stirring frequently bring to a low simmer. Add salt and pepper to taste. Turn heat to low.
4. Drain pasta and add to veggie mixture. Stir until sauce is mixed and warmed through. Serve with a sprinkling of sunflower seeds.

When your face matches the colour of your shirt after a very effective Peloton treadmill workout. 😊🤢👌🏻my freestyle libre sensor is peaking through my tights 🤣 Skipped my run yesterday and got some much needed rest Saturday (the day included 2 naps! 😴😴😴). I woke Friday night at midnight to a pod alarm (I forgot to change my expiring pod/insulin pump before bed! 😑), woke again at 2am with a gross low feeling (4.7 going ⬇️). I woke up for run clinic Saturday morning and felt, well, exhausted. In the past I would have pushed through, hiding what happened and telling myself I was fine and then likely slogging through my planned 10km with friends. My husband was lovely, “if your not feelin it, stay home” ❤️ So I gave myself grace and went back to bed. This is me, turning over a new leaf, managing my disease but also recognizing my day to day is different than others, and that’s ok. The amount of loving texts I got yesterday from friends was wonderful-they don’t hold it against me, they love me, bunk pancreas and all. ❤️❤️❤️

Right now the plan is to run tonight!! If we need to cancel last minute an e-mail will be sent at 5:00 along with a post here. Bundle up and let's do some laps!! :)

Well this white stuff wasn’t supposed to happen today!! We will keep an eye on the roads and see what they are like this afternoon. We will post here and email everyone if clinic needs to be cancelled tonight for safety reasons.
