Mondays: 6-6:45am at Colliery Dam, meet at the entrance off Sixth St. Adult Fitness All Abilities

Tuesdays and Thursdays: 6-6:45am at Anchor Way Park above Harbour Air. Adult Fitness All Abilities

I’m obsessed with these coconut pancakes that are high in protein and fibre. I load them up with plain Greek yogurt and a low sugar syrup. Yum yum yum.

Recipe
1/4 cup coconut flour (use a knife to level out)
3 eggs
1 Tbsp syrup ( I use E.D Smith Syrup which has 75% less sugar than maple syrup)
1 Tbsp olive oil
1 Tsp baking powder
1 Tsp vanilla extract
1/8 tsp salt

Mix it all together using a whisk to get all the lumps out. Drop by spoonful and cook on medium-low heat for 4 minutes a side. Makes 6 small pancakes. Make sure the pan is hot. I put coconut oil in the pan.
