Ingredients:
2 ½ cups almond flour
½ tsp baking soda
½ tsp baking powder
½ tsp sea salt
¼ cup arrowroot powder
½ cup gogi berries
1 tsp cinnamon
3 large eggs (room temperature)
⅓ cup applesauce or yogurt
¼ cup maple syrup or honey
¼ cup coconut oil (melted)
⅓ cup milk (milk of choice)
1 tsp vanilla extract
1 Tbsp apple cider vinegar (ACV)
Instructions:
1. Preheat oven to 350°F. Use a silicone 12-count muffin pan.
2. In a large bowl, combine almond flour, arrowroot powder, baking soda, baking powder, sea salt, gogi berries, and cinnamon.
3. In a separate mixing bowl, whisk the eggs, applesauce, maple syrup, melted coconut oil, milk, vanilla, and apple cider vinegar.
4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
5. Divide batter evenly among muffin cups. Bake for 20–22 minutes until lightly golden brown, or until a toothpick inserted into the center comes out clean.
6. Let cool in the pan for 5–10 minutes, then transfer to a wire rack.
