Lemon Cheesecake 🍰
8 Simple Pleasures Digestive cookies
2 tsp butter, melted
8 tbsp low-fat cream cheese
3 tbsp Splenda
8 tbsp low-fat sour cream
Grated lemon peel and juice from 1 lemon
1 egg
Preheat oven to 325F. Mix crushed cookies and butter until blended. Press on bottom of small pie plate. Beat remainder of ingredients and pour over crust. Bake 20- 25 minutes. Cool and refrigerate at least 2 hours.
