With the cooler temps coming people are reaching for food to warm up. I wanted to share a yummy recipe we make often and pair with a salad and some garlic bread.
Can be made in one pot in little to no time so it's easy on those busy nights.
LASAGNA SOUP 🥣🍲
Ingredients:
* 2 tbsp olive oil
* 1 pound of ground chicken
* 1 large onion, diced
* 4 1/2 cups low sodium chicken stock
* 1 14.5 oz can of diced tomatoes
* 1 14.5 oz can of crushed tomatoes
* 8 lasagna noodles, broken into 1 inch pieces
* italian spices to taste
* 1 cup of shredded mozzarella cheese
Directions :
1. Heat 1 tbsp olive oil in large pot, add ground chicken and brown.
2. When cooked add remaining olive oil and diced onions.
3. Saute for about 3 minutes. Stiring often.
4. Add in chicken stock, tomatoes, and seasoning. Add in broken lasagna noodles.
5. Bring to a boil, reduce heat and let simmer until noodles are cooked. Approximately 20 minutes.
6. Remove from heat, spoon into bowl and top with cheese.
