The Rec & Leisure Healthy Eating Class was at it again this week!
The delicious smell of Chicken Gnocchi Soup drifted through South Campus and had everyone feeling hungry.
This soup is truly a warm hug in a bowl, and itās quick and easy to prepare!
Ingredients
2 Tbsp olive oil
1 large yellow onion, chopped
3 large carrots, peeled and chopped (about 1½ cups)
2 celery stalks, chopped
4 garlic cloves, chopped
¼ cup all-purpose flour
6 cups chicken broth
1½ lb boneless, skinless chicken thighs, cut into 1-inch pieces
1 tsp fresh thyme, chopped
½ tsp kosher salt (plus more to taste)
½ tsp black pepper (plus more to taste)
1 lb dried gnocchi
1 (5āoz) container baby spinach, roughly chopped
1 cup half-and-half
Directions
1ļøā£ Heat the olive oil over medium heat in a Dutch oven. Add the onion, carrots, and celery. Cook, stirring occasionally, until softened (10ā12 minutes). Add the garlic during the last minute of cooking.
2ļøā£ Stir in the flour and cook for about 1 minute, stirring constantly until the vegetables are evenly coated. Gradually stir in the chicken broth and bring to a simmer. Add the chicken, thyme, salt, and pepper. Return to a simmer over medium heat, then reduce to medium-low and cook until the chicken is cooked through (about 5 minutes).
3ļøā£ Stir in the gnocchi and cook, covered, stirring occasionally, until tender and fluffy (4ā5 minutes). Add the spinach and half-and-half, stirring until well combined and the spinach has wilted (1ā2 minutes). Remove from heat and season with additional salt and pepper to taste.

ā Use storeābought rotisserie chicken for a quick, time-saving hack.
ā Avoid overcooking the gnocchi, they only take about 5 minutes and will float to the top when ready.
ā Enjoy on its own or serve with dinner rolls or a fresh salad.
