Growing up, the harsh words of bullies coupled with a constant “dieting” society and the need to “look” a certain way really shifted how I felt about myself and how I looked. In high school I developed an eating disorder – something I felt I could finally control. And though not even about food (the eating disorder – in most cases), this was the act of doing something (I suffered silently with Bulimia Nervosa) when feelings and emotions brought me to a point and situation where I felt out of touch with myself – nervous and anxious, or out of control – and resulted in my binging and purging activities. Though it is something I am not proud of, I have realized over the years that my going through this has helped in shaping and shifting me into the person I am today and more so, share my story with others and help them get to a point where they are absolutely in love with who they are – their value and worth in this world.

There is a place for all foods…..if you understand how food nutrients fuel your day, your mind, your heart, and your soul!
This image reminds me of all those things, and I’m so glad I am at a place where not having or having a slice of cake is my decision, and can be enjoyable as opposed to feeling guilty about it.

You all got a little happy on Sunday when I showcased the trifle I made for a Christmas party on the weekend…..which I had been thinking about for a few weeks!
I hope you can capture the deliciousness that this dessert is and enjoy over the holidays! Make it 3-5 hours before serving! I made the bottom layer of panettone too big, so ideally you’re looking for four layers!
Ingredients:
•1 pint blueberries, washed and dried
•1 pint strawberries, washed and chopped
•1 small pomegranate, cleaned
•1/4-1/3C Grand Marnier
•1 Tbsp Sugar
•1 container Mascarpone Cheese
•1, 473 ml container whipped cream
•1 Cup icing sugar
• Pandoro Panettone (plain, don’t use the icing sugar)

Directions:
1. Place the berries and pomegranates on a bowl and add grand Marnier and sugar to macerate for a bit.
2. While the mascarpone cheese on medium high speed. Transfer to a bowl.
3. Clean bowl of stand mixer and dry well. Add the whipping cream and begin mixing, on high speed for 20 seconds. Add the vanilla and icing sugar and continue beating on high speed until stiff peaks form. About a minute or slightly longer. Carefully fold in the whipped cream to the mascarpone and fold gently to combine.
4. Slice your panettone into pieces or chunks and place in the bottom of a trifle dish. Note unsliced the bottom layer too thick. Aim to get four layers. Make sure the panettone is packed with few spaces. Top with berries (and their juices), and a layer of the mascarpone/whipped cream. Repeat layers finishing with the whipped mascarpone layer!
5. You can leave as is, or top with pomegranates, shredded chocolate, or whatever you choose!
Enjoy! And no…..it doesn’t taste like feet!

I remember hearing Anna Olson speak years ago and she said ‘when I don’t know what to make for dinner I just take out carrots, celery and an onion and the rest comes to me’……and I’ve never forgotten that……AND I tell you it’s true! The flavour and scents that are lit up when these three beauties hit some olive oil are endless…..not to mention the creativity it sparks!

I remember when we first introduced sushi to our kids and they weren’t sure what to do with it! They are slowly getting there, as they expand their palate, but this one is definitely a fun food for them!

It’s December 4 and I’ve seen so many ‘December goals’ posts through the week.

Yes. It’s important to have goals. But are they realistic? I saw a post with 8 things to start doing this month. Is that honestly realistic for most who may already have a few extra parties or get togethers or mall runs to squeeze in. Never mind some gift wrapping? Oh and being a parent.

Be realistic. Be consistent with what you already do, and make your life easier….not harder! Especially this month!
