You all got a little happy on Sunday when I showcased the trifle I made for a Christmas party on the weekend…..which I had been thinking about for a few weeks!
I hope you can capture the deliciousness that this dessert is and enjoy over the holidays! Make it 3-5 hours before serving! I made the bottom layer of panettone too big, so ideally you’re looking for four layers!
Ingredients:
•1 pint blueberries, washed and dried
•1 pint strawberries, washed and chopped
•1 small pomegranate, cleaned
•1/4-1/3C Grand Marnier
•1 Tbsp Sugar
•1 container Mascarpone Cheese
•1, 473 ml container whipped cream
•1 Cup icing sugar
• Pandoro Panettone (plain, don’t use the icing sugar)
Directions:
1. Place the berries and pomegranates on a bowl and add grand Marnier and sugar to macerate for a bit.
2. While the mascarpone cheese on medium high speed. Transfer to a bowl.
3. Clean bowl of stand mixer and dry well. Add the whipping cream and begin mixing, on high speed for 20 seconds. Add the vanilla and icing sugar and continue beating on high speed until stiff peaks form. About a minute or slightly longer. Carefully fold in the whipped cream to the mascarpone and fold gently to combine.
4. Slice your panettone into pieces or chunks and place in the bottom of a trifle dish. Note unsliced the bottom layer too thick. Aim to get four layers. Make sure the panettone is packed with few spaces. Top with berries (and their juices), and a layer of the mascarpone/whipped cream. Repeat layers finishing with the whipped mascarpone layer!
5. You can leave as is, or top with pomegranates, shredded chocolate, or whatever you choose!
