Classic Vanilla Chia Seed Pudding Recipe
Ingredients:
1 cup milk of choice (almond, oat, coconut)
3–4 Tbsp chia seeds (white or black)
1–2 tsp pure maple syrup or raw honey (optional, to taste)
½ tsp pure vanilla extract (optional)
Directions:
Combine: In a jar or bowl, whisk together the milk, chia seeds, sweetener, vanilla
Stir Well & Wait: Stir very well, ensuring no large clumps remain. Let the mixture sit for 5–10 minutes, then give it another good stir or whisk to break up any clumping.
Chill: Cover and refrigerate for at least 2 hours, or ideally overnight (8–12 hours), until it has a pudding-like consistency.
Serve: Stir again before serving. Add your favorite toppings.
Suggested Toppings
Fresh berries (strawberries, blueberries, raspberries)
Sliced banana
Granola for crunch ( no added refined sugar - or make your own)
Nuts (almonds, walnuts) or coconut flakes
Nut butter drizzle ( almond butter ) - avoid peanut butter
Storage: The pudding will keep in an airtight container in the fridge for up to 5 days.
Prevent Clumping: The most common issue is clumping. Whisking thoroughly, waiting 10 minutes, and whisking again is the key to a smooth texture.
Consistency: If the pudding is too thick in the morning, stir in a splash of extra milk. If it is too thin, add a teaspoon more of chia seeds and let it sit for another 30 minutes.
