Happy SOUP-ER Monday 💖
I give you this beautiful bowl of my Antiinflammatory Cauliflower Mint Soup.
Cauliflower is high in vitamin C & K, fiber, and folate.
It is high in antioxidants, which helps fight inflammation and oxidative stress.
Also, there are compounds in the cauliflower that help the body to detox, and it supports proper nutrient absorption and toxin and waste removal from the body.
Here is the recipe⬇️
💁Lucy's Anti-inflammatory Cauliflower Mint Soup💚🌱

Ingredients:
✅1 med onion diced
✅3 cloves of garlic thinly slice
✅1 tbsp of coconut oil
✅6 cups of cauliflower florets
✅a hand full of mint
✅6 -8 cups of boiled water
✅1 tsp of sea salt
✅1 tsp of black pepper
✅Thyme - 2 sprigs
✅1 tbsp of turmeric ( optional)

💁Directions:
1. In a large pot, heat up the coconut oil on med heat, add in the garlic, and onions
Saute for 10 minutes until soft.
2. Add in cauliflower, mint, thyme incl the water, add your salt/ pepper and turmeric.
3. Turn down your heat once boiling to med low for at least 1 hour.
4. to puree, I use a hand blender until all the ingredients are smooth.
5. Serve in bowls and enjoy.❤
6. You can add toppings for additional healthy omega 3 fats such as walnuts or h**p seeds •
Garnish with mint leaves 🍃 👌

I love salads, you can add in whatever you want and make it as colorful as you want.🌈
The more colorful, the more phytonutrients.

This is a super strawberry salad in which I added organic strawberries, 2 large organic granny Smith apples, 1/2 an organic fennel bulb, 2 organic celery stalks, organic cucumber, organic lettuce, organic spinach & raw pumpkin seeds.

MUSHROOMS⬇️🍄
You take up so "mushroom" in my heart.🤣🍄❣
Mushrooms are packed with nutritional value.
Low in calories and are great sources of fiber and protein.
I love mushrooms and use them in a variety of ways, in my soups & broth, in a stir fry, with rice, pasta and enjoy the occasional mushroom coffee. Yummy, I sure do love mushrooms.🍄
They also provide many important nutrients including B vitamins, selenium, potassium, copper and particularly Vitamin D when exposed to the sun.🌞
Quite impressive wouldnt you say? Today's post is all about mushrooms, get ready for some fun facts⬇️👍

🍄Health Benefits of Mushrooms⬇️

🍄Copper- helps your body make free blood cells, which are used to deliver oxygen all over the body, also this mineral is important to other processes in the body like maintaining healthy bones & nerves.

🍄Potassium- extremely important when it comes to the heart, muscles & nerve function

🍄They also contain B vitamins as well as antioxidants called selenium, which helps support the immune system and prevent damage to cells and tissue.
Antioxidants may help you live a longer, and healthier life.
A diet rich in antioxidants protect cells from free radicals, helping the body cope w/ the normal oxidative stress that damages healty cells.

🍄Mushrooms are a gut healthy food, they are prebiotic, which means they nourish, the good bacteria in your gut.
They've also been found to balance the microbiome, such as Acidophilus and Bifidobacterium.

Rich Vegan Dessert with a Healthy Twist❤️🥑🍫

ingredients:
- 2 ripe avocados, pitted | 400 grams
- ¼ cup unsweetened cocoa powder | 22 grams
- ¼ cup maple syrup (or more to taste) | 60 milliliters
- 2 tablespoons chia seeds | 30 grams
- 1 teaspoon vanilla extract | 5 milliliters
- Pinch of sea salt
- ¼ cup unsweetened plant-based milk (almond, soy, or oat), if needed for smoother blending
- Optional toppings: fresh berries, chopped nuts, vegan chocolate shavings

directions:
1. Combine the avocado flesh, cocoa powder, maple syrup, chia seeds, vanilla extract, and salt in a food processor or high-speed blender.
2. Blend until completely smooth and creamy, scraping down the sides as needed. If the mixture is too thick, add plant-based milk one tablespoon at a time until the desired smooth consistency is reached.
3. Taste and adjust sweetness as needed.
4. Divide the mousse among serving bowls or glasses.
5. Refrigerate for at least 30 minutes to allow the mousse to chill and the chia seeds to slightly thicken it.
6. Garnish with fresh berries, chopped nuts, or vegan chocolate shavings before serving, if desired.

Happy Recipe Saturday 🩵
Healthy Cookies 🍪

Eversince I was diagnosed with a rare autoimmune disease ( )30 years ago, I began my journey to healing through natural nutrition.
Avoiding any added refined sugar has been one of the biggest parts of that journey.
I love experimenting in my kitchen, coming up with recipes that not only have alternatives to refined sugars but also taste delicious.

Here is an easy oatmeal chocolate chip recipe that is healthy and tastes great 👍

3- Ingredient Vegan Cookies 🍪

Ingredients:

🍪2 cups of oats ( I used gluten-free/ organic)
🍪2 1/2 bananas mashed
🍪1/2 cup of chocolate chips( I use brand - dairy free, no refined sugars)

Directions:

Mash the bananas in a bowl and mix with the oats and chocolate chips in a bowl.

Mold into 12 cookies.

Bake in oven at 180° for 12 -14 minutes.

Cool on a wire rack.

Enjoy! Let me know if you try making them.

💁Having fun with black kale.😜🌈🎈
This kale I am holding is often called black kale, dinosaur or lucianto.
I am definately planning to have this growing in my garden this year.🌿🌿🌿
This variety of kale features dark blue-green leaves with a slightly wrinkled and firm texture. The hearty leaves of Dino kale are tall and narrow and retains its firm texture even after its been cooked.
It has a slightly sweeter and more delicate taste than the curly kind with its flavor described as earthy, but not so bitter with an almost nutty sweetness.

💁More health facts:
✅Kale is filled with powerful antioxidants such as carotenoids and flavonoids to help protect against various cancers.
✅High in iron that is good for proper liver function and per calorie, kale has more iron than beef.
✅Per calorie, kale offers more calcium than milk.
✅High in Vit A which is good for vision and skin
✅High in Vit C- good for our immune system

Are you stressed?🤔
I'm sure we all are, but there are natural ways to reduce our stress.
Have you heard of ashwagandha?🤔
It's an adaptogen. What is an adaptogen, you ask?
It's an all natural herb that helps your body respond to stress, supports the function of the adrenal glands, and stabilizes mood.
It is a little treasure that can help both men and women with anxiety, sleep problems, or headaches.
If you haven't tried it before, it is a bitter herb with a woody flavor.
It mixes well with warming spices and is a great example of food medicine.
Here is a basic ashwagandha hot cacao recipe:👇

Hot Cacao Ashwagandha ☕⬇️

☕1 cup of almond milk
☕1 tablespoon of raw cacao powder
☕1/2 teaspoon of raw honey or pure maple syrup
☕1/2 teaspoon of ashwagandha root powder
☕1/4 teaspoon of cinnamon

You could also use ground ginger, cardamom, collagen, or coconut oil

☕Add all the ingredients to a sauce pan and whisk over medium heat until smooth.

Enjoy warm💕☕

Here is how to upgrade your cold cuts from conventional to healthier options:

Ingredients: Healthier brands have short, recognizable ingredient lists (e.g., "turkey, water, salt"). Conventional brands add fillers, preservatives, and sugar.

Nitrates/Nitrites: Healthier options are "uncured" or "no nitrates added" (excluding natural celery powder, which still has the same chemical effect but is often perceived as better). Conventional brands use synthetic preservatives linked to health risks.

Processing: Better brands use whole muscle cuts (oven-roasted) instead of pressed, formed, or "mixed" meat products (like bologna

Shopping Tips to Ensure Quality:

Go to the Deli Counter: Freshly sliced meat is generally less processed and has fewer preservatives than pre-packaged, vacuum-sealed meats.
