Rising food costs can make hosting tough. Try this budget-friendly holiday recipe!

Slow-Cooker Burrito Bowls

Ingredients
2 boneless, skinless chicken breasts (680 g / 1½ lb)
375 mL (1½ cups) canned diced tomatoes (no salt added)
310 mL (1¼ cups) low-sodium chicken broth
10 mL (2 tsp) chili powder
5 mL (1 tsp) ground cumin
5 mL (1 tsp) garlic powder
1 can (540 mL / 19 oz) black beans, drained and rinsed
250 mL (1 cup) uncooked brown rice
250 mL (1 cup) frozen or canned corn (no salt added)

Directions
Lightly spray slow cooker with cooking spray.
Add chicken, tomatoes (with juice), broth, chili powder, cumin, and garlic powder. Ensure chicken is covered with liquid; add broth if needed. Cook on low 3–4 hrs.
Stir in beans, rice, and corn. Cook on low another 3–4 hrs.
In last hour, check rice, stir, and add broth if dry.
When rice is tender, shred chicken and return to cooker.
Serve in bowls with optional toppings.

250 mL (1 tasse) maïs surgelé ou en conserve (sans sel ajouté)

Préparation
Vaporiser la mijoteuse d’enduit de cuisson.
Ajouter poulet, tomates, bouillon, chili, cumin, ail. Couvrir et cuire à basse température 3–4 h.
Incorporer haricots, riz, maïs. Cuire encore 3–4 h.
Dernière heure : vérifier riz, remuer, ajouter bouillon si sec.
Quand riz tendre, effilocher poulet et remettre.
Servir avec garnitures au choix.

Regardless of how we spend it, the winter/holiday season can be a stressful time of year for many of us. Extra expenses, a busier social calendar, and food and drink indulgences can sometimes leave us feeling depleted and overwhelmed.

Some of the best ways to take care of yourself during this busy time of year are through exercise and gratitude. Taking time each day to move your body-whether through sports, a walk outside, or a visit to the gym, can reduce stress and help us all feel restored. Taking a short health break, paying attention to self-care, and taking time to think about what you are grateful for, can all help you experience a happy and healthy holiday period. Lastly, remember – if you decide to drink this holiday season, do so mindfully – have lots of water and non-alcoholic beverages in between drinks, don’t forget to eat, and always have a designated driver. Drink Less, Live More!
