Behind the scenes of last weekend’s photo shoot!📸⁠

Last time I had professional photos done was about 6 years ago at my office at Bloor West Wellness clinic. Then my only modality of practice was homeopathy. It was a really great shoot but I have to say I enjoyed this one a bit more! Why? Because as a Holistic Nutritionist I was abe to showcase some great meals ideas AND got to gobble them a up once the day was done 🤗😋⁠

👉🏼I am a registered Homeopath which is a regulated health profession in Ontario. ⁠

👉🏼I am a holistic nutritionist certified as an RHN as well as an Registered Nutritional Consulting Practitioner (RNCP) and Registered Orthomolecular Health Practitioner(ROHP) accredited by the International Organization of Nutritional Consultants (IONC) with the highest standard of entry and annual educational requirements.⁠

👉🏼I have an Honours Bachelor of Science Degree from the University of Toronto where my studies focused on Human and Fetal Biology.⁠

👉🏼Before becoming a Homeopath and Nutritionist I worked in a community pharmacy for over 10 years and learned a lot about conventional care vs. holistic/ patient-centred management of disease. ⁠

These muffins are incredibly filling and can be paired with almost anything. ⁠

Enjoy them with your favorite nut or seed butter and my easy homemade Sugar Free Blueberry Jam 👇🏼⁠

🫐 1 1/4 cups fresh or thawed frozen blueberries + 1 tablespoon chia seeds. Place in food processor and blend until smooth. Set overnight in the refrigerator. ⁠

Transitioning to a home nutrition and homeopathy practice has been one of my very favorite things to come from this new world. I’m loving it and so are my clients/patients! ⁠

What I didn’t anticipate was that it would be a lot harder to set the boundaries between work and rest. For example, if I make plans to just veg out in front of the TV and catch up on Netflix 🤭... it doesn’t happen. I’m bored, restless and find it hard to resist checking emails.⁠

Now that the weather is warmer ☀️ I’m making it a priority to get outside for my rest days. Enjoying some seasonal recreation like canoeing 🛶, swimming 🏊‍♀️ and going for walks by the beach (Lake Ontario has some nice ones!)🏖 ⁠

If you also find it hard to separate work from rest now that you’ve transitioned to a home office- here are some tips to get you outside and into nature, so you can activate that parasympathetic nervous system and rest, de-stress and heal!⁠

1. 🪴 Garden: Getting your hands dirty is not only relaxing, it’s a promise for good things in the future (with a bountiful harvest) and it improves your microbiome- exposing you to good bacteria from the earth.⁠

2. Take up that hobby you’ve always dreamed of doing: Last year I finally bought a 🛶 canoe! It’s something I always wanted but never made the time to figure out the logistics. Well I put my foot down last year (as I’m sure many of us did!) and decided, it was now or never! I’m so glad I did. There is no greater feeling than being out on the lake and feeling my paddle cut into the velvety water below ❤️.⁠

3. 🗺 Map out your next great hiking adventure! Type into Google- “the best hiking trails to do this summer near me”. Make a list of your favourites. Then hit one destination every weekend. Pack a picnic 🧺 and make it an adventure.⁠

One way to really make a difference this Earth Day is to commit to cooking and enjoying all of your meals right at home. 🏡 ⁠

Think about the last time you ordered takeout and the amount of plastic trash you were left with. 🤦‍♀️ 🗑 ⁠

Ingredients: ⁠⁠

2/3 cup Cashew Butter⁠⁠
1/4 cup Coconut Butter (melted)⁠⁠
2 tbsps Maple Syrup⁠⁠
1 cup Freeze-Dried Strawberries (crushed)⁠⁠
2 cups Puffed Brown Rice⁠⁠
1/2 cup Bittersweet Chocolate Chips⁠⁠
2 tbsps Cashew Butter (for chocolate topping) ⁠⁠
⁠⁠
⁠⁠
Directions:⁠⁠
⁠⁠
1. Line a 8 x 8 inch baking pan with parchment paper and grease lightly with coconut oil.⁠⁠
⁠⁠
2. In a medium mixing bowl, stir together the cashew butter, melted coconut butter, maple syrup and crushed freeze-dried strawberries until combined. Using a spoon stir in the puffed brown rice cereal until it is completely coated. Press evenly into the prepared pan.⁠⁠
⁠⁠
3. For the chocolate layer: Melt chocolate chips with cashew butter in 30 second intervals in the microwave, or on the stove-top. Careful not to overheat as the chocolate will seize. Spread topping over cereal layer and garnish with more freeze-dried strawberries, if desired.⁠⁠

4. Refrigerate the bars for at least 1 hour to set. Use a sharp knife to cut into 16 squares. ⁠⁠

* For a nut-free version, use sunflower butter.*⁠⁠

4 Eggs⁠⁠
1/4 cup Cherry Tomatoes (finely chopped)⁠⁠
2 tbsp Cilantro (finely chopped)⁠⁠
2 tbsps Red Onion (finely chopped)⁠⁠
Juice of 1 Lime⁠⁠
1/2 tsp Cayenne Pepper⁠⁠
1/2 tsp Sea Salt ⁠⁠
⁠⁠
⁠⁠
Directions: ⁠⁠
⁠⁠
1. Soft boil your eggs: Bring a saucepan (large enough to hold the eggs in a single layer) of water to a boil over medium-high heat. Using a spoon, gently lower cold-from-the-fridge eggs into the water one at a time (don't drop them in or they'll crack). Cook for exactly 6½ minutes, adjusting the heat as necessary to maintain a gentle boil. Fill a bowl large enough to hold the eggs with cold water and some ice cubes. When the eggs are done cooking, transfer them to the water and chill until just slightly warm, about 2 minutes. Gently crack the eggs all over and peel under running water.⁠⁠

2. While eggs are boiling prepare the pico de gallo by combining all ingredients into a small bowl.⁠⁠
⁠⁠
3. Once eggs are cooled, gently cut them in 1/2 length-ways and use a small spoon to spoon the pico de gallo over top. Sprinkle with extra cayenne pepper and enjoy. ⁠⁠
