It's been some time since I put this page up to date.
Not too much going on at the moment cooking-wise. My last concoction was a soup that eats like a meal.

1 Vidalia onion sliced, 1 or 2 celery stalks, 2 carrots, 2 tbsps of olive oil, 1 bay leaf, 8 cups of beef broth, 1 jar of Classico tomato sauce with basil, a handful of vermicelli cut up in smaller sizes, oregano and parsley to taste.

Heat olive oil and sear onion, celery, and carrots. Add beef broth, bay leaf, oregano, and parsley. Simmer at medium heat for 2 hours. Add jar of sauce and cut up vermicelli (I do it with my hands). Simmer for 10 to 15 minutes (depending on how you like your pasta). Voila! you can always add some roasted or leftover cubed beef.

French onion soup!

1 sweet onion sliced thin
1 can of beef condensed soup
1 tbsp of butter
1 tbsp of olive oil
Pinch of pepper

Slice onion very thinly as it will reduce cooking time. In a pan (or dutch oven) on medium heat pour olive oil and butter to temperature. Add onions and let them heat to a caramelized state. Do not stir too often. Keep an eye on them not to let them scorch. If you use regular onions, add some honey to help with caramelization. In a dutch oven put caramelized onions, condensed beef broth, a pinch of pepper. Cook on medium-high heat for 10 minutes. Transfer to ovenproof bowls, add a baked crusty bread, and top with your preferred cheese. Mine is a mix of swiss, Emmental, and gruyere. Finish off with some parsley. Bake at 425 or top grill in the oven for approx 5 minutes (until top cheese is bubbling and browned.) Serve and enjoy!

Really long while since my last post.

Today - Bread...

4 cups of hard unbleached flour sifted
1 cup of enriched white flour sifted
2 tablespoons of instant yeast
1/2 cup of butter
2 cups of cold water

Mix flour and yeast, add cut-up butter, and crumble mixture. When you press the mixture in your hand and it sticks together, add water a bit at a time and mix together by hand (yes) until dry dough is all absorbed by the water and it forms a ball. I like to knead my dough on my marble slab. Then add olive oil in another bowl and transfer ball of dough, cover with a cloth, and put in a dry warm space for 1 hour to let rise. Take out and either roll out to make pizza dough or make bread. Bake at 425 degrees Fahrenheit for approximately 20 to 30 minutes for bread. No need to pre-cook if using dough for pizza. 15 minutes of cooking time is just enough.

I know it's been awhile! Here goes...
Dinner for 1.

Chicken Pizza
1 white Greek style pita
Classico di Campania sweet basil marinara red sauce
Red pepper/celeri diced
Cooked chicken piri piri diced
Paprika/oregano
Old cheddar cheese grated
Parsley.
Bake at 450 F 10 minutes
Voila! Dinner.

Brunch for one. Two eggs over easy, roasted potatoes, carrots, green onions seasoned with greek spice mix, tomatoes, black forest ham and 2 slices of edam cheese, and flaxseed/grain bread. Good Easter celebration.

Chicken kebabs with rice.

Ground chicken
Bread crumbs
1 egg
Garlic
Paprika
Greek spice
Poultry spice
Thyme
Pepper
Ancho spice

Mix well. Work meat around skewer and lay on a parchement and baking sheet pan. Bake at 400 farenheit for 20 to 30 minutes.

I use sidekick rice, I was being lazy.
