Last day of holidays calls for trying out a new pancake recipe. Adapted this one from :
-1 cup oats (calls for quick oats but I am using Bob's Red Mill gluten free)
-1 cup cottage cheese
-4 eggs
-1 tbsp honey
-1/4 tsp cinnamon
-grass fed butter
-1 scoop Vanilla
*original recipe did not include protein powder so I added a bit of unsweetened Almomd milk to make sure they weren't too dry
