Roasted one of my son's chickens cut in half yesterday and had 4 servings of it with baked Jerk rice and veggies. I made a huge soup tonight with it and had 4 big bowls already and have 3 servings left to freeze and another serving of chicken still left for a sandwich or nachos, etc.

Who puts leftover soup in a bag to freeze - this gurl! Love my vacuum sealer!

Besides the broth and spices, I also add lots of fresh ginger to my soup and it's super easy to make with a bag of frozen soup mix veg and I added some more carrots to it. I throw in some pasta and rice as well. Nom nom nom!

Mac n cheese scallop taters with Bacon Loaded Potato, Everything Onion & Pepper. I tried lean ground pork for the first time with my meatloaf and it was amazing! Besides seasonings, I also add Worchestershire, a little ketchup and rolled oats to it! Both dishes were done in the microwave in steamers in record time and easy clean-up to boot! Yum, yum, YUM! Looking forward to getting the Everything Ketchup! Oh and a side of Hailey amazing mustard pickles was the perfect addition to this dish. 😋
