Chocolate Zucchini Protein Muffins 🍫🤎

Moist, chocolatey, and secretly packed with protein & fiber… honestly the best muffins I’ve made in a LONG time 😋

Made a batch yesterday and they’re already almost gone so here we are making round 2 🙊

If you need a gut friendly, mama approved snack, these are SO YUMMY!

Macros per muffin:
205 cals | 10g protein | 21g carbs | 9g fat

DRY
All-purpose flour: 120 g
Chocolate protein powder: 100g
(I used Schinoussa Triple Chocolate Lava Cake protein powder)
Cocoa powder: 50 g
Baking soda: 5 g
Baking powder: 5 g
Salt: 3 g
Cinnamon 2 g

WET
2 eggs
Maple syrup: 120 g
Melted coconut oil: 55 g
Greek yogurt: 120 g
Vanilla extract: 5 g
Grated zucchini (don’t squeeze out liquid): 165g
Chocolate chips: 80g

Combine all dry ingredients, add wet ingredients and mix. Fold in zucchini & chocolate chips

Bake at 350 for 18-22 min | Makes 12
