NO-OIL • NO-MILK VEGGIE CAKE

Fruit Base Veggies give all the moisture—no dairy, no oil, no oven!
Veggies Used:
Carrot • Zucchini • Celery • Cabbage (finely grated)Fruit Base: Apples or bananas (no parchment needed)⸻✨
IngredientsDry: •
1 ½ cups flour • ½ cup sugar • 1 tsp baking powder • ½ tsp baking soda • Pinch of salt • ¼ cup cocoa powder (for chocolate layer)Wet (moisture from veggies only): • 1 cup finely grated mixed veggies • 1 egg • 1 tsp vanilla • 2–4 tbsp water (ONLY if batter is too thick)Fruit Base: • 1–2 apples thinly sliced or 2 bananas sliced lengthwise⸻✨
Instructions
1. Mix Dry: Combine flour, sugar, baking powder, baking soda, and salt.
2. Mix Wet: Beat egg + vanilla, then add the grated veggies. Their natural water acts as the moisture source.
3. Combine: Mix wet into dry. Add 1 tbsp water at a time ONLY if needed. Batter should be thick but pourable.
4. Divide Batter: • Vanilla: leave half plain. • Chocolate: add cocoa + a splash of water if needed.
5. Prepare Pan (No Oil, No Parchment):Line the bottom of your Saladmaster skillet with apple or banana slices. The fruit caramelizes and prevents sticking.
6. Layer Batter: Pour vanilla first, then chocolate. Swirl gently for marble effect.
🔥 Stovetop Baking (15–20 mins) • Cover the skillet. • Heat 1 minute on medium, then shift to VERY LOW. • Cook 15–20 minutes, no peeking. • Cake is done when top is set and springs back gently.⸻✨
