Winning working lunch!
Protein, veggies, fiber, good fats.
Roasted beets
Roasted sweet potatoes (seasoned with S/P and cinnamon)
Feta cheese
Green onion
Avocado
Hard boiled egg
Tuna (packed in EVOO, use oil for your dressing)
Squeeze of lemon juice
I would have thrown some pumpkin seeds and walnuts on top but those got used up making breakfast cookies.
