Often called the 'sunshine vitamin', vitamin D plays an integral role in skin protection and rejuvenation. In its active form as calcitriol, vitamin D contributes to skin cell growth, repair, and metabolism. It enhances the skin's immune system and helps to destroy free radicals that can cause premature ageing. Beyond this there are so many more benefits including perhaps the most vital are regulating the absorption of calcium and phosphorus and facilitating normal immune system function. Getting enough vitamin D is important for typical growth and development of bones and teeth, as well as improved resistance to certain diseases. Mother’s Day outdoor Run 🏃‍♀️ by the lake in the awesome sun ☀️ (included a Mother’s Day heart necklace from my son) Running outside increases energy, decreases feelings of depression, and… you are more likely to repeat your workouts, indoors or outdoors! Being in nature is very calming, and research shows that running outdoors releases less stress hormone, cortisol. Soak up your health in the sun!

It’s easy to let negative thoughts and feelings creep in during the COVID-19 pandemic.
The coronavirus is spreading. Nations are under quarantine. People are out of work. Schools remain closed, indefinitely.
If you’re feeling afraid, you’re not alone.
Despite all of this, keeping a positive mindset can go a long way in managing through the difficult time.
Holding onto that positive attitude can help you center on things that provide you with what you need to make it through this day. It’s really important these days.

The Soup 🍲 that slims+ boosts immunity! Yes we are in the thick of the season where our immune systems are tested to the core... Nutrients in this hearty soup not only fights late-winter ❄️ colds but also fights acidity in your body. Studies show that minerals and acid fighting foods actually lengthen part of our DNA that shrinks as we age, helping us live longer, healthier lives!Ingredients:
- 1 Tbs. coconut oil
- 1 onion diced
- 4 tsp minced garlic
- 2 medium carrots diced
- 4 Cups of cannellini beans
- 2 tsp ginger
- 1 tsp turmeric
- 4-6 cups of low sodium (or your own 😉 ) vegetable broth
- 3-4 cups of Kale
Directions: Sauté onion in oil. Add garlic, stir two minutes. Add carrots, beans, ginger and turmeric, sister for three minutes. Add stock, bring to a boil, then simmer for 10 minutes. Add kale, cook until soft. Enjoy with a dash of Himalayan pink salt black pepper to taste. Serves 2 servings. Enjoy 😊

Family day Carrot Cake Pancakes
Most pancakes are made with white flour and are high in carbs and sugar...
This version is made without any sweetener contains only 12 grams of carbs per serving and freeze well if need be. Reheat in toaster oven throughout the week! And yes it is yummy 😋
Have the kids get involved and start a family day tradition perhaps. Or may get you and a significant other or even amazing 😉 just you and them cakes!
Ingredients:
- 3/4 cup almond flour
- 5 tbsp coconut flower
- 1 tbsp ground cinnamon - 3/4 tsp baking powder
- 1/4 tsp of each baking soda and sea salt
- 1/8 teaspoon nutmeg
- 1 cup bpa free coconut milk - 3 eggs or 1/2 cup egg whites
- 3 tbsp of coconut oil
- 1 1/2 tsp of pure vanilla extract - 1 cup shredded carrot (preferably organic)
- 1/3 cup of Finely chopped pecans ( and no not the candied ones 😂)
- 3 tbsp of coconut butter, for serving (optional)
Instructions:
1. Preheat oven to 200°F in a large bowl whisk together almond flour or coconut flour cinnamon ginger baking powder baking soda salt and not Meg. In a medium bowl whisk coconut milk eggs or egg whites coconut oil and vanilla forward to a bar with flour mixture and stir to combine. Fold in carrots pecans.
2. He griddle or large nonstick skillet on medium low brush with the oil work in batches scoop better and is really using about 3 tablespoons butter for each spread into about 3 1/2 inch circles cook until golden 2-3 minutes each.
Enjoy not only these but your time with your loved ones. 😊❤️
