Just got this book in the mail yesterday!! Eeek! Soooo excited to dive in. I’ve been following for awhile now & what she has created in New York with is so inspiring. 💗
So, in honour of the arrival of this long awaited book. I made Rose, Cardamom, Coconut Rice Pudding this morning!
*Note*
~This is not actually a recipe from the book but one I just made up because I was inspired to do so.
Recipe:
1 cup rice (I used red rice)
2 cups water
Cook the rice as package directs.
1 can full fat coconut milk
1tsp cardamom powder
2tsp rose water
Dash of vanilla
6 dried apricots, chopped
Ghee (I used Rasa Holistic Rose Cardamom Vanilla Ghee)
2 tablespoons Maple Syrup or sweeter of choice.
Heat together in a pot and serve.
🌸 This is great as a breakfast or sweet treat. Also super grounding and nourishing for Vata & Pitta dosha. Kapha should be mindful about the sweetness of this dish. Enjoy! 💕
