Finally a gluten free bread recipe that rocks!
I have reduced my bread intake dramatically since I have been dealing with autoimmune disease but every now and then... fresh bread is heavenly. Gluten free baking can be a challenge and many of my experiments have turned out either very 'eggy' or 'brick like'. This gluten free country seed bread (http://www.allergyfreealaska.com/2013/02/26/gluten-free-country-seed-bread/) has become one of my favourite recipe. You can interchange soreghum with millet flour and I use 1-2 tablespoons of chia seeds in little water instead of xanthan gum. The bread is also yummy without the seeds. Happy baking!

Don't overboard with fruit. Go for more vegetables - steamed, roasted, mashed... Use a combination to make it more interesting. Remember! Vegetables should not just be a side dish on your plate. They need to be a major part if your diet. More variety means more variety of nutrients.
