Healthy cookies made with heart. 💚

These cookies are baked with simple ingredients, a cosy aroma, and are perfect for a feel-good treat that fits into everyday baking. 🍪

Ingredients (yields about 12 cookies)
▪️1 cup buckwheat flour
▪️1/2 cup rolled oats (optional for texture)
▪️1/4 cup cane sugar (you can reduce or substitute with coconut sugar)
▪️1/4 cup coconut oil, melted
▪️1 large egg
▪️1/2 teaspoon baking bicarbonate (baking soda)
▪️1/4 teaspoon sea salt
▪️1/2 teaspoon ground cinnamon
▪️3/4 cup dark chocolate chips (70% cacao minimum)
▪️Optional: 1/3 cup chopped nuts (walnuts or almonds)

Instructions:
Preheat oven to 175°C. Line a baking sheet with parchment.
In a medium bowl, whisk together buckwheat flour, oats (if using), baking bicarbonate, salt, and cinnamon.
In another bowl, whisk egg, cane sugar, and melted coconut oil until well combined.
Combine wet and dry ingredients until just mixed. Fold in dark chocolate chips and optional nuts.
Scoop about 1.5 tablespoons of dough per cookie onto the sheet, spacing about 2 inches apart.
Bake 10–12 minutes, until edges are lightly golden. Cookies may look soft in the centre, but will firm up as they cool.
Let cookies cool on the sheet for 5 minutes, then transfer to a rack to cool completely.
