Has it been scientifically proven? Has it stood the test of longitudinal studies? Is it safe?

ANSWER TO YESTERDAY’S QUESTION

There are many color varieties of maize in Cameroon and each one has a different nutrient profile with extra benefits.

For example, yellow maize is richer in beta-carotene which is used as Vitamin A in the body. While the purple and red ones are rich in antioxidants, which help fight oxidative stress in the body. So yellow, purple and red corn are seen to be of higher nutrient value than their white counterpart, which is rather slightly higher in carbohydrates.

However, all of them are classified as whole grains, which are rich in fibre and carbohydrates. And when choosing healthier starch options for people with diabetes, we want to look at fibre rich starches.

So to answer the question of which fufucorn is preferred for people with diabetes (yellow or white which are the most popularly eaten in Cameroon), both are okay to eat. What matters most is the preparation method and portion size.

So let’s look at how to healthily prepare fufu corn to retain as much fibre as possible. Fibre is what helps to regulate blood glucose.

1. Do not peel the corn before grinding ❌
The outer layer is rich in fibre ✅

2. Do not sieve the corn flour ❌
Sieving will simply get rid of the fibre which we
don’t want

PORTION SIZE

1. Hold up one fist of your hand like this ✊🏾. The size of one fist is an estimate of how much fufu corn you should have in a meal. Too much, can increase your blood glucose.

Remember, with diabetes it’s all about appropriate portions. Small, regular meals are preferred than large portions once or twice a day.

I was in the market the other day looking for Watermelon to buy and got so turned off by sight of the fruits close to the same gutter where people urinate and throw away all sorts of dirt.

The sad part, they also sold sliced watermelon which had flies landing on it probably from the same gutter. I eventually just went back home without the watermelon.

This is a common story for many in Cameroon, where food hygiene is just a hot mess. Make sure you thoroughly wash your fruits and vegetables before consuming and definitely avoid buying raw fruits and vegetables that have already been sliced and ready to eat.

How sure are you that the person who cut them washed their hands? What about the flies landing on the food? What about the unhygienic environment and even the possibility that it was never washed before slicing?

Cockroach baked bread is what we get when we don’t have strict implementation of hygiene standards in our bakeries and restaurants in Cameroon. I was so annoyed when I got this from a popular bakery in Yaoundé 🇨🇲. Food safety doesn’t appear to be a priority in this country. Where do we begin?

Normally, the HACCP principes should be used to maintain hygiene standards with trained professionals checking regularly to make sure these standards are maintained.

The frustrating thing is, this hygiene problem is nationwide. Normally no one should be holding your bread bare hands. They should wear gloves and have a hair net on at all times in the Bakery. But in most bakeries I’ve gone to, they hold your bread bare hands and give to you. Terrible!

Every time you want to brush your teeth, only blood! It can be quite scary 🥲. Reoccurring bleeding gums can be a sign of vitamin C deficiency. This is called scurvy. Eat more citrus fruits like oranges, grape fruit and lemons which are rich in Vitamin C 🍊🍋, as well as guava and pineapple🍍. Tomatoes and potatoes are good sources of vitamin C too 🥳.

Only make sure say you wash the food items well well to avoid typhoid or cholera stories that touch 🙃. Tag a friend who needs to see this and share to raise awareness.

Do not give honey to your infant before the age of 1 year. 🚫
Do not include honey in their diet at all before the age of 1 year. 🚫

Why? You may ask🤔. Honey has been found to be a major culprit for Infant Botulism. This is a food borne illness caused by the ingestion pre-formed toxins in food, in this case clostridium botulinum spores in honey😅.

When infants ingest this clostridium botulinum spores they germinate in their gut and begin to release toxins. The long and short is that this can be very fatal for infants, even leading to death if the appropriate anti-toxin and treatment protocol is not followed in time🫣.

For older children and adults, our gut has already developed a solid enough defence system to prevent the germination and growth of the bacterium😅.

I was going through my gallery this morning and came across these pictures from 2019. They confirmed to me that my determination to make this country 🇨🇲 a nutritionally healthier place has not wavered.

This was Yaounde’s first health and fitness day and I was invited to come on board as a consultant dietitian. I spoke to the audience about sound nutritional practices, followed by a one on one counseling session.

Looking forward to more of such events in Cameroon, and partnerships with health professionals to drive forward scientifically sound information to help our communities and nation.

Dear Moms, Dads and Caretakers 💁🏾‍♀️🧔🏾‍♂️👶🏽

You may want to reconsider giving your infant or toddler tea and fruit juice regularly 👀. Here’s why.

Once a child turns 6 months, they can begin to eat selected normal everyday foods. With the excitement and freedom of choice, parents often go with easy quick options to fill up their child or stop them from crying☕️🧃🥤.

Unfortunately tea and juice are the more popular choice of drinks given to children. Many teas contain caffeine which is not good for children as it keeps them hyperactive, affects their ability to concentrate and can interfere with their sleeping patterns. 👀

In addition to this, teas are often prepared with sugar and water, meaning the child is not really gaining any nutrient from the mixture. With time, this excess consumption of sugar can cause them to gain unhealthy weight and also lead to tooth decay. 😬🫣

Store bought processed fruit juices are also quite high in sugar, sodium and acids, which are not healthy. The sugar and acid in fruit juices can damage a child’s teeth, causing tooth decay and cavities.

Instead, give your child clean drinking water, fresh sliced fruit, puréed/blended natural fruit (with seeds removed). 👌🏾

Always go for liquids that contain nutrients e.g soups with meat and vegetable chunks they can chew. This is a critical period for their growth and if not handled well, they may become stunted in growth.
