welcome to september! we’re sad to announce they avani yoga will not be offering any studio classes this season 😭

but never fear! we will still use the space for special yoga events, so stay tuned for our famous yoga dinner parties with .rs 🥕astrology + yoga workshops with ✨ and other goodness!

AND we still have one room left ☝️ for nourish yoga retreat in later this month!! it’s a perfect week of yoga, salty sea air, mystic mountain hiking, splashing in the sea, and delicious plant based food. our home base is beside an old olive grove at the wonderful

we are going on retreat soon (well, in September😅) and in addition to the sea 🌊 the sun ☀️ and the yoga 🧘🏽‍♂️, we are already getting waaay too excited for THE FOOD! 😍

that’s because alllll of our meals for the whole week will be prepared by a certified holistic nutritionist! 💪
⠀⠀⠀⠀⠀⠀⠀⠀⠀
this is just one of the seasonal, plant-based delish dishes you can enjoy this september at nourish retreat: roasted pumpkin and peach salad with almonds.

this combination of local, seasonal ingredients is rich in vitamins, minerals, and fibre and makes a fabulous entree or light meal.
⠀⠀⠀⠀⠀⠀⠀⠀
here’s the recipe, courtesy of your private chef at the retreat, Katya of vita.rs 🙏

Ingredients for 4 portions:

1 kilogram of pumpkin
4 peaches
1 handful of almonds
1+3 tablespoons of olive oil
3 table spoons of honey
1 lemon
sea salt + pepper
1 head of lettuce, or rukola
2 tablespoons pumpkin seeds
⠀⠀⠀⠀⠀⠀⠀⠀⠀
fire up the oven to 220 degrees celsius.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
peel and chop pumpkin into big chunks, tossing the pieces in olive oil, salt, and pepper before spreading them on a parchment-lined baking sheet and popping in the heated oven for about 35-40 minutes, til it’s soft. it’s all good if edges begin to crisp up and take on a deep colour.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
👉pro tip: you can also roast the peaches! this will add an element of depth and extra sweetness to the dish. but you can also use fresh, raw peach for a bit of contrast, as in the continuation of the recipe below. you choose what sounds good to you today! 🍑
⠀⠀⠀⠀⠀⠀⠀⠀⠀
next, make the dressing by combining the honey, olive oil, and the juice of one lemon🍋 with a bit of salt and pepper.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
👉 aleks interjection: i like to use small jars to make my salad dressings, cause you can give them a good shake to emulsify the ingredients (just make sure the lid is screwed on tight!)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
toss the roasted pumpkin with about half the dressing, and while the oven is still hot, throw the almonds in for about 10 minutes to get them nice and toasty.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
prepare the rest of the ingredients, slicing peaches and tearing or chopping lettuce. combine with roasted pumpkin and sprinkle the almonds and pumpkin seeds on top. enjoy!!
