To be healthy for me, means first and foremost to be happy; To surround myself with people that bring out the best in me, to have a career that fulfills me and gives me purpose, to move my body and to be in tune with my spiritually. Secondly, to nourish my body and mind with local, seasonal whole foods and to drink lots of water. We are all different, so no one diet fits all! “One man’s food is another man’s poison”
So tune into the messages your body is sending, listen to your body! Ultimately we all know what is good or bad for us. This one was a pleasant surprise 🫢, I saw it on tik tok, no less 😉. Just a few ingredients: 3 tblp almond flour, 1 egg, 1/2 tsp oil, 1/2 tsp baking powder and salt to taste . Mix everything in a ramekin or mug. Bake for 90 sec in the microwave. That's it! ☺️ Once ready you can slice in half and toast. Works well for sandwiches too! So if you want a bread option that's packed with protein, tastes great, is simple and quick to make, try this one and let me know what you think.

SPONTANEOUS MORNINGS - I don't regard myself as a spontaneous person and kind of envy those who are 😉 On this particular morning we had just finished a very intense pilates session. Being in the car with 2 of my favourite people, hot and sweaty, one of us suggested driving straight to the beach, no swimwear, no towels, just as we were. We debated for like 30 seconds and before we knew it we were in the clear blue water of the Mediterranean. Bliss!!
Also the moment I found out that my sister was arriving on a surprise visit from abroad in just a few hours!!! A moment to cherish 💗

UPDATE ON THE RED LENTIL BREAD, personally it was a bit heavy on the stomach so I ended up making croutons with it 😋 Of course there are so many different red lentil bread recipes to try so maybe I'll give it another go in the future. If you're like me and love your lentils, you can always refer to an older post with a lighter version; red lentil wraps. 😊
THE FEATURED BREAD TODAY is oat bread. Tasty, gluten-free and easier on the stomach, a bit crumbly so not ideal for sandwiches but great for morning toast or afternoon snack. Just an FYI, the recipes I use are usually simple with just a few ingredients, preferably ones I have in my pantry, and as natural/healthy as possible. There is such a variety out there so choose recipes that fit your diet and preference. Most of all have fun wit it!!

It's become increasingly difficult to maintain balance when going through menopause, ladies you know what I mean 😉 So lately I've really started making conscious choices when it comes to my nutrition and exercise and mental health. Pilates has been amazing! Thank you ❤️ it was the first step in my journey and has made a huge difference. I'm now trying new alternatives to mainstream bread. This red lentil bread is one option. It's sturdy and slices well. Packed with protein, healthy and very easy to make. It has quite a strong lentil taste and for those with sensitive stomachs like me, may seem a bit heavy. Otherwise a great alternative.
I will be experimenting with other ingredients so stay tuned 😊

When you get to a certain age 😉 you may start doubting yourself, doubting your ability to do stuff; with your aching joints, fear of heights, sweaty hands (that's me BTW🤪). The secret behind facing your fears is to just do it! take action! This is me doing something out of my comfort zone. I had so much fun, but most of all got inspired to do more! So here's to new adventures 😁😁
