A winter classic, reimagined. 🌿

This Lamb’s Lettuce with Vegan “Bacon” Vinaigrette is a quiet favourite in our Überlingen kitchen. Simple ingredients, thoughtfully prepared. Comforting, grounding, and deeply nourishing.

Created by our culinary team as part of our seasonal menu, we believe good food is meant to be shared, so here is the recipe.

📌 Ingredients (Serves 4)

For the Lamb’s Lettuce
• 280 g lamb’s lettuce, washed and trimmed

Toss gently with the vinaigrette and arrange on plates.

Vegan “Bacon” Vinaigrette
• 35 ml olive oil
• 15 ml light vinegar
• 15 g onion, sautéed
• 20 g potato
• 5 g vegan “bacon” (smoked, dried mushrooms)
• 95 ml water
• A pinch of salt

Preparation
• Finely dice onion and potato
• Sauté onion until translucent
• Cook potato and vegan “bacon” with water until soft
• Add liquid if needed
• Let cool slightly, then blend until smooth

To finish
Garnish with cress and sunflower or pumpkin seeds.

Developed by our two head chefs: A light, aromatic Cardamom Ice Cream with subtle winter spices.

Because we believe good things are meant to be shared, we did not want to keep this recipe to ourselves.

📌 Shopping List (Serves 5)

For the Cardamom Ice Cream Base:
• 1 cinnamon stick
• 1 tsp cardamom seeds
• 250 ml almond milk
• 20 g sugar
• 2 g agar agar
• 8 g almond oil

For the Buckwheat Crumble:
• 50 g buckwheat flour
• 12 g almond oil
• 8 g sugar
• A pinch of salt
• Vanilla

For the Plum Compote:
• 100 g plums
• 100 g plum juice or apple juice
• 2 g locust bean gum

We have a new seasonal favorite. Developed by our two head chefs, this Baked Butternut with Chestnut Filling has quickly captured the hearts (and tastebuds) of our guests.

Because we believe in sharing the goodness, we couldn’t keep the recipe from you.

📌 Shopping List (Serves 4):

For the Squash:
5 Rondini squash (or small butternut squashes)
20 ml frying oil
Barbecue seasoning, turmeric, & salt

For the Filling:
400 g cooked chestnuts
50 g onions (finely chopped)
18 ml dark vinegar
18 ml lupin seasoning (or soy sauce)
120 g sheep’s fresh cheese (cream cheese)
Pepper to taste
A splash of water for reducing

For the Finish:
Pickled pumpkin (Hokkaido)
Whey sauce & Sea Buckthorn purée

Over 150 experts joined us on 22 November to explore one key question: How does physical exercise shape long and healthy lives?

Highlights included new insights from our Genesis Study showing that fasting can preserve muscle strength, expert talks on evidence-based training, metabolism, nutrition, mental health, circadian rhythms, and women’s bone health.
