Plant based dairy alternatives continue to grow in popularity. Taste and mouthfeel are getting closer and closer to their animal based originals. One challenge, however, often remains: the micronutrient profile.

Cheese, for example, naturally provides valuable micronutrients such as vitamin A, vitamin B12, calcium and zinc. Plant based alternatives usually cannot match this profile on their own.

Copper is an essential trace element that plays a role in numerous important processes in the human body. It acts as a cofactor in various enzymes and other proteins and is therefore crucial for many metabolic reactions.

𝗧𝗵𝗲 𝗠𝗼𝘀𝘁 𝗜𝗺𝗽𝗼𝗿𝘁𝗮𝗻𝘁 𝗙𝗮𝗰𝘁𝘀 𝗔𝗯𝗼𝘂𝘁 𝗖𝗼𝗽𝗽𝗲𝗿 𝗮𝘁 𝗮 𝗚𝗹𝗮𝗻𝗰𝗲:

𝗪𝗛𝗬? Copper-containing enzymes contribute to normal energy-yielding metabolism, the maintenance of normal connective tissue, and normal iron metabolism. In addition, copper plays an important role in the nervous system and is involved in the formation and maintenance of myelin, the protective sheath surrounding nerve fibres.

𝗪𝗛𝗢? Copper deficiency is uncommon, yet individuals with certain medical conditions, malabsorption issues, or very restricted diets may be at higher risk of developing copper deficiency.

𝗪𝗛𝗘𝗥𝗘? Copper is found in a variety of foods. Good sources include shellfish, organ meats such as liver, nuts and seeds, cocoa products, whole grains and legumes such as chickpeas and lentils. Many fruits and vegetables also contain small amounts.

𝗛𝗢𝗪 𝗠𝗨𝗖𝗛? Excessive copper retention in the body over time can be toxic for humans, particularly for the liver. The EFSA concluded that daily intakes of up to 5 mg copper are not expected to lead to adverse copper accumulation in adults and established an acceptable daily intake of 0.07 milligrams per kilogram of body weight.

Pantothenic acid – also known as 𝗩𝗶𝘁𝗮𝗺𝗶𝗻 𝗕𝟱 – is a water-soluble member of the B-vitamin group. It plays a fundamental role in numerous metabolic processes, particularly those that convert carbohydrates, fats and proteins into energy. And while it is widely available in many foods, its importance should not be underestimated.

𝗕𝘂𝘁 𝘁𝗵𝗲𝗿𝗲 𝗶𝘀 𝗺𝗼𝗿𝗲 𝘁𝗼 𝗸𝗻𝗼𝘄 𝗮𝗯𝗼𝘂𝘁 𝗩𝗶𝘁𝗮𝗺𝗶𝗻 𝗕𝟱

𝗪𝗛𝗬? Pantothenic acid is an essential precursor for the biosynthesis of 𝗰𝗼𝗲𝗻𝘇𝘆𝗺𝗲 𝗔 (𝗖𝗼𝗔) 𝗮𝗻𝗱 acyl carrier protein (ACP), and therefore part of various biochemical processes:

We recently had the pleasure of taking part in FI Asia, one of the leading events bringing together the Asian food & beverage industry. It was a fantastic opportunity to:

• Explore both local and global F&B trends

Ahead of the exhibition, we hosted a seminar on micronutrient premixes for beverages, which proved to be a key area of interest in the local market. The discussions highlighted how innovative premix solutions can help meet consumer demand for fortified and functional products.

WorldFood Istanbul, the international meeting point of the Turkish food industry, welcomed more than 1,000 international brands and over 70,000 visitors from around the globe this year. We were proud to be part of this major event together with our affiliate Stern Ingredients Turkey and our sister companies from the Stern-Wywiol Gruppe.
