yellow lentils with black olives & tofu chunks topping - raw vegan
ingredients
: yellow lentils : as many as you like
: a handful : black olives
: a handful : tofu chunks
: 2 tbsp : fresh lemon juice
: 2 tbsp : olive oil
: 1 pinch : sea salt
: 1 pinch : black pepper
: 2 slices : lemon
: 1-2 branches : thyme

preparation
yellow lentils (or red or brown or green) depending on their type & size, lentils should be soaked in lukewarm water for up to 12 hours. place them in a fine sieve & rinse with warm water. put the lentils on a plate, along with the black olives & the tofu chunks. fresh lemon juice, olive oil, sea salt & black pepper on top. garnish with two fresh lemon slices & 1-2 sprigs of fresh thyme.

wild garlic/bear's garlic pesto - raw vegan
ingredients for 4 people
: 1/2 cup : fresh mint
: 1/8 cup : fresh basil
: 1/4 cup : pine nuts
: 3 pieces : garlic cloves
: 1/4 cup : parmesan cheese
: 4 tbsp : fresh olive oil
: 1 pinch : sea salt
: 1 pinch : black pepper
: 1 lemon : zest
: blender

preparation
peel & dice the garlic. add all ingredients to the middle bowl of the blender & blend to desired consistency. serve the pesto with a pasta dish (e.g. gnocchi).

a brief notice of my life ... this list puts also the focus on the raw vegan nutrition consultation:

up to the age of 48 years:
i survived narcissism, emotionally abuse & physical violence by family members. in all the years after the deepest depression i was working on myself to become the person who i want to be up to date. when i was validated as a medical certified raw vegan nutritionist by june 2021 all the human toxicity of the family members -that stuck on me like a cape- dropped off for good. since that moment i started to flourish & moved on again with the first day of the rest of my life.

at the age of 30 years:
i was on top of my own deepest depression developed in 30 years. in march 2003 i was referred by my homeopathic doctor to a psychologist. her method was based on analytical psychotherapy developed by the swiss psychiatrist carl gustav jung. in this ambulatory treatment i was consulted for about 6 to 10 meetings. after this followed a stationary stay from oct 2003 to jan 2004. it was a psychosomatic medical center for body & soul (no medications). i was discharged in a healthy state.

up to the age of 30 years:
i had neurodermatitis in the crook of the arms & hollow of the knees.

up to the age of 20 years:
i survived five losses on my parents side.

losses on my dad's side:
- granddad 1993; i was 20 years old
i had to stand the mental breakdown of my dad in 1988; i was 16 years old
- grandma 1984; i was 11 years old

losses on my mom's side:
- grandma 1977; i was about 4 years old
- uncle 1975; i was about 2 years old
- granddad 1954; before my birth

plum jam - raw vegan
ingredients
: 1¼ cups : fresh or frozen plums
: 1/4 cup : dried plums
: 1 pinch : clove powder

preparation
thaw the frozen prunes in the fridge overnight. in the morning, mix the defrosted plums with the dried plums & the powdered cloves in a high-performance blender until creamy - done! raw vegan jams can be stored in the fridge for about a week.

tomato radicchio salad with macadamia & pecan nuts topping - raw vegan
ingredients
: a bunch : radicchio leaves
: a bunch : cherry tomatoes
: a bunch : macadamia nuts
: a bunch : pecan nuts
: 2 tbsp : fresh lemon juice
: 2 tbsp : fresh olive oil
: 1 pinch : sea salt
: 1 pinch : black pepper

preparation
wash the radicchio leaves & cherry tomatoes. halve the cherry tomatoes, macadamia nuts & pecan nuts. put it all nicely on a plate. give the lemon juice & the olive oil on top of it. add a pinch of sea salt & black pepper to it.

green smoothie - raw vegan
ingredients
: 1 - 2 pcs : stalk celery
: 1 pc : zucchini (small)
: 6 pcs : green grapes
: 5 - 6 pcs : basil leaves
: 2 tbsp : fresh lemon juice
: 2 tbsp : fresh lime juice
: 1 pinch : sea salt
: blender

preparation
wash the green fruits & vegetables. clean the celery stalks, remove the celery greens & roughly chop the stalks. peel & dice the zucchini. pick a handful of grapes & cut in half. clean the basil, squeeze the lemon & the lime. in a blender, puree all the prepared ingredients with a pinch of salt. pour the finished smoothie into a glass, garnish with celery leaves and/or a slice of lemon or lime.

cake pops - raw vegan or vegetarian
ingredients
: 1/2 cup : oat flakes, soft baby oat flakes
: ¾ cup + 1 tbsp : cashew nuts
: 1 tbsp : cocoa nibs, dark chocolate drops
: for sweetening : agave syrup or stevia
: for sweetening : honey
: coating : dark-, milk-, or white chocolate
: cake pop sticks
: blender

preparation
place the rolled oats & cashews in the blender jar. mix both ingredients until a fine mass is formed. add the agave syrup, stevia or honey to the fine mass in the container. briefly mix the ingredients again & mix in the cocoa nibs. form small balls out of the dough & put them in the fridge for an hour. insert the cake pop-sticks into the balls so that they remain stuck. finally, dip the cake pops on a stick into the warmed dark, milk or white chocolate & garnish with creative toppings. leave the cake pops in the fridge overnight.
