Breaded chicken goujons with Pofiber 🍗

These chicken goujons are coated in Pofiber (potato fibre) instead of breadcrumbs to keep the carbs very low.

No egg needed — just mix Pofiber with spices and freshly grated ginger and coat the chicken tenders.

Cook 20 minutes in an airfryer until golden and cooked through.

Served here with roasted low-carb vegetables 🥬but would also be great to serve with a stir fry.
