Before this stroke, I was a flight attendant of 10+ years on Air Pacific and between my work flights, I was one of three women on Fiji's surf team and trained daily. I considered myself to be a busisness minded and motivated person, however my stroke changed everything in my life. My mind kept strong to recover, but physically i was not able. The original plan was to make a biz with selling the seedlings of eggplants, however, on May 27, 2013 my friend Lite and I were playing around with all the eggplant that had grown from our garden. We had so much eggplant we didn't know what to do with it, so we just started experimenting with all kinds of ways to cook the eggplant. By the end of the day, we had stumbled on our own recipe for an eggplant jam. Of course, it's unusual to believe eggplant can be as tasty as a sweet treat, but we had so much fun making it we thought this would be great to share with our friends. (make a biz out of it). When I shared the jam with my mom, she was just as inspired by the unique taste of the jam. Hence, the original business we had planned with selling eggplant seedlings had made an unexpected but delightful turn.. We would now be making jam. The 6th of July was our first time taking the jam to a flea market... We sold all the jam in less than 2 hours! We were motivated more than ever to make and sell more jam, within a month of selling the in the market we created a relationship with a local farmer to buy eggplant in wholesale quantity, we were well on our way. The labels and image for our jam is growing as we are in our process to always continue making quality tasty eggplant jam. Through jam making, I not only feel a sense of accomplishment and freedom. It's the best medicine for my recovery and healing process. Thank you to everyone who has and continued to support me in my journey.
