𼣠Carrot, Ginger & Coconut Soup
A comforting bowl thatâs every bit as good for you as it tastes - supporting gut health, calming inflammation, and helping you feel balanced from the inside out.
⨠Recipe (serves 4)
Ingredients:
2 lbs carrots (chopped) ⢠1 onion (quartered) ⢠3 garlic cloves (pressed) ⢠2 inches fresh ginger (grated) ⢠300ml veg stock/broth ⢠ž can (300 ml) coconut milk ⢠Juice of 1 orange ⢠½ tsp chilli powder ⢠½ tsp turmeric ⢠1 tbsp olive oil ⢠Pinch of salt
Method:
1ď¸âŁ SautĂŠ onion, carrots, garlic, ginger, chilli & turmeric in olive oil for 5 mins.
2ď¸âŁ Add stock, season, and simmer for 30 mins.
3ď¸âŁ Add coconut milk & orange juice, blend until smooth.
4ď¸âŁ Serve warm with a swirl of coconut milk & fresh herbs.
