Need to increase your protein and fibre intake? - This will help to support weight loss, reduce sugar cravings and support hormone imbalances.
Lentils are great for doing both. This dish is easy to make and versatile.
Make it as a base for other dishes such as a veggie Sheppard’s pie or use it as a pasta sauce. Add other vegetables such as carrots, courgette or spinach.
Batch cook and freeze.
1 onion chopped
2-3 garlic chopped
2 tbsp tomato puree
1 tsp of dried mixed herbs
2 tbsp red wine or balsamic vinegar (optional)
1 tbsp nutritional yeast (optional – add if a vegetarian/vegan)
350/400ml passata
1 cup dried red lentils
1 1/2 cup vegetable broth
Salt & pepper
Method:
Cook onion, garlic until soft
Add tomato puree, passata, wine, herbs and seasoning. Cook for a few minutes.
Add lentils and broth
Bring to the boil, then simmer until the lentils are soft.
Stir constantly.
More liquid may have to be added throughout.
