Staff member TD and Guest SR had fun baking this banana cake yesterday afternoon. It was such a easy recipe to follow, it took the stress and anxiety away as we stayed distracted from our thoughts but focused on the outcome.
We used yogurt pots (125g) that had been washed and dried to help measure some of our ingredients. 1 pot of vegetable oil, 1 pot of light brown sugar (packed and pressed down until it was filled up fully), 3 pots of self raising flour, 3 eggs, 3 bananas, 1 teaspoon of baking powder and 1 teaspoon of cinnamon powder.
Our Guest SR, mashed up the bananas with a fork whilst TD measured all the ingredients. Once the bananas had been mashed up, TD cracked 3 eggs into the bananas, then slowly added the light brown sugar and then folded in the flour that had the cinnamon powder and baking powder in it too.
Once fully combined, we placed the cake batter into a loaf tin and put it in the pre-heated oven for 40 minutes, at 160C (fan oven) [for gas ovens, it would be gas mark 4/180C).
Once it was baked and fully cooled down, Guest SR decorated their slice with Galaxy chocolate and some mini chocolates from Lidl 🤩
This was such a lovely treat to have with a cup of tea!
