She's cherry-liicious and will be swinging into groups (Miley Cyrus style from the 20th April πŸ™ŒπŸΌπŸ˜‚)

This cherry-studded number is topped with crumbly biscuit and dipped and drizzled in creamy custard..which sounds right up my street!!! (I'm hoping it gives me Bakewell tart vibes!!!)

OMG these were so good!!! (Much needed after a rubbish week too!) Think calzone without all the calories/Swips!! πŸ™ŒπŸΌ

Super easy too....

❀️ 1 packet Lean chicken mince
❀️ Seasoning (I used JD seasoning chicken rub) Garlic granules and oregano
❀️ Fillings -
Ham/olives/cheese/tomato puree and garlic
Reduced fat pesto and grated mozzarella
Pepperoni/cheese/tomato puree and garlic
❀️ This made 3 separate chicken calzone/pizza pockets
❀️ I sprinkled the pizza pocket with oregano, garlic granules and some of the chicken rub to get a bit of a crust in the top

The pepperoni slices were 1 Swip each (I used 2 in one pizza pocket cut up) The reduced fat pesto was 1 Swip per TBSP (I used 1 TBSP in 1 pizza pocket)

❀️ I cooked in the air fryer for 15-20 mins

Everything else was free/speed πŸ’ͺ🏼πŸ₯— this is an awesome SP meal guys!! Save as an idea for later πŸ“πŸ™ŒπŸΌ

I even made my own bread sauce - tweaking a recipe that my beloved Grandma taught me as a little girl πŸ₯° I'm not spending 14 Swips on a packet mix!!

πŸ’• Valentine's day chocolate dip dessert for 2 πŸ’•

Pnb and dark chocolate mini waffles

Ingredients
40g Ready Brek (fibre choice)
25g PNB (healthy fats choice)
100g FF Greek yogurt
1 tsp cinnamon
Dash vanilla extract
22 dark chocolate chips/drops 1.5 swips
1 egg
Dash of skimmed milk from healthy extra calcium choice or Swip accordingly

Method
Mix together - spray a silicone waffle mould with butter frylight - this mixture made 9 little heart shapes ❀️

I airfried on Bake mode at 170 for 15 - 20 mins (you could put in the oven though)

Toppings - I melted 1 TBSP Freedom chocolate spread (2.5 Swips) and added blueberries and strawberries πŸ‘©πŸΌβ€πŸ³πŸ“ sooooo yummy πŸ˜‹ πŸ™ŒπŸΌ

Just a little bit excited to share that this week I have achieved 2 of my weight-loss goals so far for this year!! πŸ’ͺ🏼

⭐ A stone off in 6 weeks (have I written myself my own achievement certificate? YES I HAVE πŸ˜‚πŸ™ŒπŸΌ) Sometimes you need to be your own cheerleader!!!
⭐ Slimmer of the week with 3lb off on Wednesday - Snacking on satsumas is one of my top tips that's helping me right now so delighted there were some in the SOW basket πŸ™πŸΌ

I'm always telling my members they are the best project they will ever work on (+ Im sometimes so busy looking after everyone else I forget this applies to me too) I also lose my way sometimes, motivation dips, life gets in the way.....You know the drill! Please know this is so normal!!! The best place to get ALL the support you need to get things back on track is in group ❀️

πŸ” CHEESE BURGER SPRING ROLLS πŸ”

I've seen these all over social media so I wanted to give them a try...one word....banging πŸ™ŒπŸΌπŸ˜‚ I'm so passionate about making my meals exciting - it makes it so much easier to stick to any healthy eating plan. I'm also a firm believer that you can food optimise ANYTHING!! over here πŸ™‹πŸΌβ€β™€οΈ

Ingredients -
❀️ Lean beef mince (I used 250g so half the pack photographed)
❀️ Seasoning (I used the JD chips and wedges seasoning as had run out of the burger blend) half a pot used for 250g mince
❀️ 1 spring onion and 3 gherkin slices finely chopped
❀️ 20g reduced fat cheddar and 20g grated mozzarella (Healthy extra)
❀️ Spring roll sheets (1.5 Swips each)
❀️ Egg wash (not photographed)

Method -
πŸ” Chuck the seasoning and mince into a bowl and mix well
πŸ” Cook off in a frying pan and drain any excess fat
πŸ” Dip a spring roll sheet into a beaten egg and lay on a plate - this bit is a little messy but worth it - add some of the beef mince, chopped up onion/gherkins and sprinkle with a mixture of the cheese
πŸ” Fold one side of the spring roll over and then fold the ends in (like you are wrapping a present) then fold the last side over. Repeat this x 5 times
πŸ” Spray a silicone/parchment liner with fry light and then spray the spring rolls too - keep them separate otherwise they will stick!! Air fry for 10 mins on 180 and then turn them and spray again with fry light and pop them back in for another 8-10 mins (checking they are nice and golden/crispy)
πŸ” Serve with speedy salad or as part of a meal. I added burger sauce for extra Swips - so worth it!!

OMG this was good!! Think Pizza Hut buffet but without the calories!!

I've photographed the ingredients in case you want to recreate. This chicken is lush (from Asda) and only 0.5 Swips a pack πŸ’ͺ🏼

I added a cheesy garlic and coriander Slimming World naan bread (available in bigger Iceland/Food Warehouse stores) My new obsession ❀️

It's meals like this that have helped me lose 10.5lbs in the last 3 weeks - I LOVE our awesome plan πŸ˜‹ I might add some seasoned potato wedges or chips next time (because I can πŸ˜‚πŸ™ŒπŸΌ ) What would you add?! πŸ€”

1. Swip FREE quiche using a fibre choice and a Calcium choice
2. Greek lamb with a SWIP free Tzatziki dressing using a fibre choice
3. Swip free garlic, coriander and cheese inspired faux naan bread (using a fibre and calcium choice)

Literally over the moon with - 3.5lbs off yesterday at group πŸ’ͺ🏼 If like me you lost your focus and motivation over Christmas I promise it is possible to get it back!!

I thought I would share another 'What I eat as a busy Mama of 2 trying to lose weight on Slimming World' post ⬇

Breakfast - High protein egg muffins. I prep these at the weekend so they are in the fridge ready for my busy weeks πŸ™ŒπŸ» great on the go brekkie - super filling and also a brilliant snack too.

Lunch - Fibre choice pizza wrap with calcium choice mozzarella and free toppings - basically whatever is in the fridge! Love a WFH lunch! Ready in 10 mins!! I always add loads of speed food to my plate to keep me nice and full!

Snacks - Satsuma/apple or if it's a hungry day a low swip packet of crisps like these in the pic. Adding speed/more free food makes your snack more satisfying - something I always share with my members ❀

Dinner - This time of year it has got to be quick/easy and comforting!! This creamy chicken, bacon and cabbage dish with mash and added speed veg always hits the spot πŸ˜‹

Dessert - Heated up hifi bar with 60g Alpro vanilla yogurt with a sleep tea 😴 This is still my fave winter warmer dessert

🧑 Comfort food that helps you cut calories without counting them 🧑

This is my FAVE soup recipe ever!!! (Ingredients in the pic below) You could buy a whole butternut squash and wrestle that to cut it up but I buy it already prepared πŸ˜‚ You need 900ml of stock and a squeeze of the garlic (2 cloves worth) You can leave out the chilli flakes if you don't want the kick 🌢️

My fab Monday members lost over 9 and a half stone between them last night and lots of them said that they had been filling up on lovely soups and food optimising their favourite comfort foods πŸ’ͺ🏼

Ps I served mine with a cheesy Slimming World garlic naan bread - GAME CHANGER πŸ™ŒπŸΌ (cheese makes everything better!!!)
