Fancy something sweet? This smoothie can be whipped up in 3 minutes and in my opinion is better than any ice lolly.
I put the following into a blender and drank it straight up:
3 cups of watermelon
10 strawberries
1/4 cup raspberries
A small handful of mint.

As Harry styles would say, watermelon sugar hiiiiiigh 🍉. Enjoy!

Tomato Gazpacho 😋 🍅. This is so quick to make, the cooling in the fridge takes the longest. For this recipe I used:

1 whole yellow or red pepper
5 big red tomatoes
1 peeled cucumber
2 cloves garlic
2 sprigs spring onion
1 1/2 tbsp sherry vinegar
2 tbsp extra virgin olive oil
A good pinch of flakey sea salt
Pinch cracked black pepper

Put it all into a blender until super smooth apart from the olive oil - slowly drizzle this in once everything else is blended. Cool in the fridge for a couple of hours before eating.

I served with a drizzle of olive oil, lots of seeds and a spoonful of homemade wild garlic pesto.
Yummy!

Chimichurri! I’ve changed the recipe to not make it so oily, to make it more of a seasoning rather than sauce. It goes amazingly well with just about anything bbq’d or roasted. Think harissa marinated aubergine or courgette, corn on the cob, fish etc…
Recipe:
1/2 red pepper, finley diced
1 big clove crushed garlic
1 cup worth of fresh coriander and/or parsley, finely chopped
1 finely diced medium chilli, go as spicy as you like
1 spring onion
4 tbsp extra virgin olive oil
1 1/2 tbsp honey
1 1/2 tbsp cider vinegar
Couple of pinches of sea salt and freshly ground pepper
Mix it all together and serve

Thai spicy prawn salad 🥕🥒🌶️🧄🫑

Ok I might have put too many chillies on 🤯🥵 but you can all be smarter than me about it.

Dressing :
1 clove crushed garlic
2 tablespoons fresh lime
2 tablespoons crunchy peanut butter
1 1/2 tablespoons fish sauce
1 1/2 tablespoons honey
(Mix together until smooth)

For the veggies I chopped/thinly sliced/peeled a variety of colourful goodness then added heaps of coriander, sesame seeds, dried chilli and some king prawns.
You can add tofu instead of prawns and also some papaya/unripe mango for some extra sweetness.

Mix it all together and and make way more than you think (double the recipe) as it’ll go down a treat.
Enjoy eating heat, in the heat! Xx

A bit of a self indulgent post, but happy birthday to Get fit with Kimmy! 😍🥂🥳 2 years since I started the business and had my first class in the park. I am absolutely loving working with all of you and it is such a joyous job. You all make me smile, laugh and feel a whole lot of love and community. I’m also continuously learning from you all, thanks for coming back you beautiful people!

Spring/summer fruit salad - sooo fresh and great for anti inflammatory properties, vitamins, fibre and minerals.
I made a dressing using:
1/2 squeezed orange
1/2 lime
Small chunk of grated ginger (leave your ginger in the freezer and grate it from frozen - makes it so easy)
About 10 leaves of mint, finely chopped.

Fruits I used - nectarine, pear, melon, blueberries and raspberries.

Sprinkle some seeds on it for extra crunch, protein and healthy fats!

Quick meal! Got any miso soup paste in your cupboards?? Then use it! Add loads of grated ginger and garlic to it, rehydrated seaweed, wholegrain noodles, spring onions, sesame seeds, coriander, 6 minute boiled eggs, sautéed mushrooms, fresh chilli - whatever you can get your hands on really. It takes 15 minutes max!

Post run brunch - boil some potatoes and make a dressing out of 1 part cider vinegar, 1 part honey and 2 parts olive oil. Add loaaaads of fresh herbs (I used tarragon), 2 boiled eggs (my fave is dropping them into boiling water for 6 minute, perfection), veggie sausages, steamed cavolo nero and loads of cress. Scrumptious and with all the nutrition your body needs to heal from a workout.
