Cranberry dark chocolate 🤤

Cacao is my favourite super food. Historically called "black gold” it contains
amazing nutrients. Raw cacao powder contains powerful phytochemicals and minerals, including protein, calcium, B vitamins, tryptophan and magnesium. These properties can be destroyed by high heat so making your own chocolate using raw cacao retains these valuable antioxidant properties

These nutrients can help lower blood pressure, improve heart health, cholesterol, stress, inflammation and depression. So it’s a good excuse to eat some every day!

Ingredients 🍫
100g cacao butter
60g raw cacao powder
2 tbsp maple syrup
1 tsp vanilla extract
Handful dried cranberries
Few drops orange extract

Method
Melt the cacao butter in a glass bowl over a pan of hot water on very low heat. Make sure the bowl doesn’t touch the water or you’ll burn your chocolate!
When melted add the rest of your ingredients except for the dried fruit stirring continuously. Mix well
Pour the mixture into silicone moulds or a lined plastic tub
Sprinkle with the dried cranberries and put into the fridge to set for at least 1 hour 😋

Interesting new clinical study linking the gut microbiome to symptom severity in COVID 19 🤓

This study showed that gut dysbiosis (imbalance of natural bacteria found in the gut) was associated with an over reaction of the immune response to SARS-CoV-2 causing increased symptom severity. It may also contribute to ‘long covid’ symptoms

So does this mean probiotics could possibly support the body to fight off COVID-19?? More research is needed to answer this question....🤔

Working in Portishead today 💊

Lockdown is always busier for me for some reason. Specialising in functional testing, I receive a lot of referrals for private testing that are not available on the NHS

What is functional testing? 🤔

Functional tests are used to assess how well the body’s systems are functioning. They enable us to identify deficiencies or imbalances which may be contributing to health issues. Tests usually involve taking a saliva, breath, urine, hair or stool sample at home and is sent off for laboratory analysis.

Examples of when functional testing may be used:

Digestive function
Adrenal or thyroid hormone status
S*x hormone balance
Nutrient status
Toxic load
Parasitic infections
Gut microflora overgrowth
Food allergy/intolerance
Cardio/metabolic function

Functional testing can speed up the consultation process as they can be very useful to get to the root of many underlying health conditions which may be delaying or preventing recovery. I always recommend functional testing when needed so we can target areas of imbalance in the body.

Crispy Roast Duck with Teriyaki fried rice 💥.
This is one of our favourite recipes. Easy, tasty and better than any takeaway! This makes plenty of teriyaki sauce so the rest can be stored in the fridge and is delicious with salmon or other meats.
Serves 2.
⭐️For the roast duck:
Season 2 duck legs with 5 spice powder, salt and pepper rubbing the spices all over into the meat
Roast in oven 180 degrees c for 75mins skin side up 😋
Teriyaki sauce:
⭐️Simmer 100ml soya sauce with 200ml water, 1 clove chopped garlic, 1 tsp grated ginger, 5 tbsp coconut sugar for 5 mins. To thicken mix 1 tbsp cornflour in 2 tbsp water in a separate bowl and add to the sauce. Mix and heat for another few minutes until sauce thickens. Set aside .
Fried rice:
⭐️Simmer 230g brown rice in 500ml water on a low heat lid on until all water is absorbed (takes about 20 mins)
When done leave to cool with lid on whilst waiting for duck to cook 👩‍🍳.
⭐️About 15 mins before duck is ready, In a large frying pan heat some cooking oil and fry 2 handfuls frozen edamame beans (or peas), 1 clove chopped garlic, add the cooked rice and 5 tbsp teriyaki sauce. Mix and fry for a few minutes then add in 2 eggs and fry for 5 mins mixing egg into the rice well. Season with salt and drizzle with some sesame oil for extra flavour🍽.
⭐️When duck is cooked, cut the meat off the bone and serve on top of the fried rice. Spoon over some extra teriyaki sauce if you like!

‘Whole-fat dairy, unprocessed meat, eggs and dark chocolate are SFA-rich foods with a complex matrix that are not associated with increased risk of CVD. The totality of available evidence does not support further limiting the intake of such foods.’
