Butterbeans remind me of my childhood and I remember them being very hard to eat, however these days I use them in many recipes and they are a great source of our much need fibre

Butterbean Curry

2 x 400g tin butter beans, drained
2 garlic cloves
1 tablespoon ginger
1 white onion
1 tablespoon oil
1 teaspoon turmeric
1 teaspoon garam masala
1 teaspoon medium curry powder
1 teaspoon salt
1 teaspoon ground coriander powder
½ teaspoon cumin powder
1 400g tin chopped tomatoes
400g coconut milk
1 handful coriander, to garnish
½ lemon, juice

Start by adding the onion, garlic, ginger, oil, turmeric, garam masala, curry powder, coriander powder, and cumin powder to a blender. Add about 60ml (¼ cup) water, and blitz into a smooth paste.

Tip all of the curry paste into your pan and cook on medium heat for 2-3 minutes, until the spices begin to turn fragrant. Stir often.
Next, add the chopped tomatoes, mix these into the curry paste, and then add the butter beans and coconut milk.

Stir everything together and, if needed, add about half a tin (~125ml) of water to loosen the sauce.

Leave your butter bean curry to simmer for 10 - 15 minutes, stirring occasionally, until the butter beans have cooked through and the sauce is thick and creamy.

Top with your chopped coriander and perhaps a squeeze of lemon juice to finish!

Very excited to try this recipe, I often get asked if Purify has anything to scoop the hummus or spread the nut butter!

Purify Crackers (finally!) 😊

180g almond flour (ground almonds)
50g chia seeds
50g linseeds or other seed mix
1 tbsp warm water
1 tbsp olive oil
1 large egg
1/2 tsp salt
1/2 tsp bicarbonate of soda
1/2 tsp of thyme
1/2 tsp of oregano

Mix the dry ingredients together - give a good stir to evenly distribute the herbs and salt. Add the water, oil and egg and mix so that you have a sticky consistency that holds together well.

Separate into two balls and roll each out 5mm thick in between greaseproof paper until it fits into whatever container you're going to bake in. Score with a knife to form shapes of your choice before baking.

Bake in oven at 180 deg for about 20 minutes. When they are done, allow to cool then crack into your chosen shapes

Love this recipe, and it’s Purify friendly!

Sheet-Pan Baked Feta With broccoli, Tomatoes and Lemon

Block of feta cheese
1 bunch of tenderstem broccoli
Cherry tomatoes
1 lemon, thinly sliced
Olive oil
Salt and freshly ground black pepper
Optional: chilli flakes or fresh herbs for garnish

Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper or foil.

Place the block of feta in the center of the pan. Surround with broccoli, tomatoes, and lemon slices.

Drizzle everything with olive oil. Sprinkle with salt, pepper, chilli flakes if using.

Roast for 20–25 minutes, until the feta is golden and soft, the tomatoes burst, and the broccoli is tender with crisp edges.

To serve, spoon the warm feta and roasted vegetables. Optionally, break the feta and gently toss everything together for a creamy finish. Garnish with herbs if desired
